I've cooked this Dish many many times professionally. In Scotland on the East Coast. I'm also Scottish. The Cullen Skink liquor should be no thicker than whole milk. In other words there is no thickeners added only the potatoes. If the potatoes aren't over cooked you'll get very little starch released. The Skink you're eating is cooked classically.

As for the thinness of Cullen Skink soup, yes, it can be thin, but it also depends on the type of potato used to cook it. I prefer to use floury "tatties" such as Maris Piper or King Edward potatoes, which can thicken it up a bit. Coming from a Scotsman that grew up in a town 12 miles from Cullen

I don't think I ever made any of the recipes but it's worth reading just for his asides. You can imagine them in his voice with the accompanying mannerisms. In the intro to one- and bear in mind the cultural references pertain to 1984- he says something like "this is a dish that you might even persuade your orange haired kids to eat, if you can get them out of their bedrooms where they're listening to Headache 100".

Glad you enjoyed your visit Gary. Place used to be called The Depot and had been there more than 25 years. Rick famously never wanted to open a London restaurant, so it had to take a place of such location and calibre to change his mind! My family and I can only afford to eat there on special occasions, but when we do we always push the boat out (pun intended! 😉) and go for the expensive seafood options, coz...when in Rome eh?! That includes having a cheeky bottle of wine which is always expertly selected and recommended by the staff and Rick's own son! Had probably the best sherry trifle I will ever taste in my entire life on one birthday visit. I still speak of it to this day, while gazing longingly at the photo I took! 😋

You get Rick reading Thomas Hardy poems, excerpts from novels, and the culture and history of the places he visits. Spain and the story of El Cid comes first to mind. A great man, much loved by his fans who number in the millions. When I was a kid, I'd sit myself down on the couch, mum's terrific Sri Lankan curry on my lap, and watch Keith Floyd, imagining I was having some of that rare-vintage French red he was quaffing. Well done Gary Lad, decent looking food. Quite expensive but if you’re getting quality then it’s value for money. The problem with Steins restaurant in Padstow is there’s so many better, cheaper options available.

Rick Stein. What a gentleman. Loved his programme’s for years. His son (can’t remember his name) was/ is also a cook and a fine one too. Unfortunately ended up under the father’s shadow and never became a Rick. Kieth however was a genius. Great video guys. 👍

Sorry as a Cornishman I would not set foot in one of his establishments. Liked what he did back in the 90s and even bought one of his early books then. Wonder if Rick prepared your plate Gary? Or was he back in Australia.

I'm dropping a 9 on this one. The combined portion size looked about substantial. Quality was definitely all over it. Price was acceptable. The soup was too watery, in my opinion, as well. The dessert absolutely carried this through for a solid, if not perfect, score.
@GaryEats9 ай бұрын
That's fair enough. A good score!

I'm not a seafood person as such, my culinary palate stretches to Haddock or Cod encased in a light crispy batter, Monk fish in a curry, or a Salmon baked with accompaniments of crisp fresh salad and new potatoes. My wife and myself ate at Rick Stein's restaurant in Padstow back in the early '90's, it was nothing out of the ordinary but there were queues like you wouldn't believe, it had a take away part as well. I can't remember the cost exactly but I can remember summing up that it wasn't worth the price difference from most other fish and chip eateries.

Great food with Rick Stein - stayed at his hotel in Padstow for three days and ate his restaurant food, amazing. I even did the cookery course there on the quayside and had a great time learning lots of new skills. The best recipes were the sambal and then the emulsified spicy guacamole. 😎

Ive had traditional Cullen Skink many times and it is supposed to be quite thin, to me that was a perfect example and looked delicious, those fishcakes did look a little bit small but I suppose the fact there was three of them made it suffice, I really did like the look of them and OMG that sticky toffee pudding with cornish clotted cream, Heaven on a plate, I think all in all considering it is a high end Restaurant value wise it was spot on, compare to the infamous Tom Kerridge Fish and Chips debackle and this wins hands down, Personally I would mark it 9 out of 10, really enjoyed this review Gary, regards Gav

Hi Gary, food looked great but i agree the sauce could have been thicker, i actually sat next to Rick Stein on a flight from Bangkok to Chiang Mai in Thailand some years ago when he was filming for his book The Far Eastern Odyssey. Really nice chap and very approachable, i do love his food channels but never made it to any of his restaurants yet, cheers and thanks, very enjoyable.

There’s so many variations of Cullen Skink. Yes it should be thicker and should also contain potatoes to help thicken the sauce and maybe leeks and a little fish or chicken stock. That’s how we used to do it in the restaurant.

The soup doesn’t have to be thick (I am Scottish) just full of flavour. I was actually impressed with the fish cakes as you had three! Normally only two are served and they may be a bit larger but cool quickly once opened and I like food to be at least warm. Am absolutely green with envy as far as the sticky toffee pudding is concerned! You’re one lucky lad!

Great video again!! Like you i'm an absolute Rick Stein fan boy, BUT.....all of his places always massively overcharge dining out on the name, particularly in Padstein, he's basically a chain now like The Ivy etc but due his large approachable tv presence he will always have a conga line of unsuspecting tourists, but that's where we are in hospitality at the moment, also at those prices, the main needed a lemon wedge! :D :D :D ooking forward to the next one! GM Rich

I was impressed with having Cullen Skink on the menu. Not many restaurants do it. Although the gravy should have been a lot thicker. I've had it in Scotland and it also contained Cod and Kipper. The potatoes should be a mix of mash and chunky spuds. What you had was more of a smoked fish soup as apposed to Cullen Skink. Many years ago I stayed at a guest house near the coast. The lady than ran it served it up for the evening meal. Wow, that was proper food.
@GaryEatsАй бұрын
I thought it was very good, but as you could see, it was a bit thin, others have said that is the way you should be served, but I’m not so sure
