Never thought we'd get a Daym Drops Christmas special! It's nice that you gave the restaurant a fair shot and provided a different perspective, without diminishing the other perspectives. Seems pretty likely that there is a real issue based on the other reviews, but it's possible they're trying to fix it (maybe the construction crews are adding more space?). Or, if not, at least they'll get one good review before going under. Seems pretty clear that the food deserves a good review, at the very least.

I believe when they're have an issue with a party of people. You should do the same bring. Badland Chuggs, your chef partner, I forgot his name but the Latino chef that is always tough. You should bring him and a couple more of your friends so you can get the experience the families and friends gets when at that establishment to make it more of an accurate review and do it with a different name so we can see how they treat the regular people. As you said they were packed. Be considerate of those waiting to be seated. Depending on how long it takes them to serve you, two to three hours is the minimum. Remember, you are at a business. It also depends on how large your party is. FYI. If it's packed means that your food is fresh. The turnover is great. By the way, your plate looked like a five all day.

Daym Imma need a check for you saying, “Tell a friend to tell a friend!” That’s my saying fam! I introduced that saying to Kool DJ Red Alert. He says it on the radio to show me love. He also shouts me out right after. If you shout me out right after saying it, I have no issue Daym. One thing to remember about reviews is, negative reviews are more likely to surface than positive ones. Daym set out to review on Yelp at the get go. When people are in a party and eating, they don't leave going 'Let's make a great review on yelp'. They go home happy! So a lot of businesses tend to offer added bonuses for reviewing on yelp positively. For example, a restaurant I go to gives a free cookie every time you check in on yelp and review. They have one of the highest ratings in the area!

I absolutely know what you mean I deliver for Uber Eats I barely get any reviews because I'm fast and I bring the food in good condition hot and usually show up early. When I do get reviews it's because some Karen wants to complain. Now I leave a message asking the customer to review me whether good, bad or indifferent.

Braised won’t mean medium, ever, by definition, if it’s medium it hasn’t been braised. It’s pink because that’s what happens with some slow cooking methods. I raised a brow when he said it too 😂

It's a personal pet peeve of mine when Yelp reviews focus more on service than the actual food. Service is important, but it can be subjective - you get waitstaff having a bad day, you hit a spot at a bad time, etc. Generally speaking, food quality doesn't change; it's either good or it's not. By all means, if you had really bad service, talk about it in your review but if I'm looking at a spot on Yelp, I want to know about the food; not the fact that your service looked at you wrong.

But it’s not just service, it’s business policies. I’ve never been to a restaurant that said you had to buy an entree before so if they aren’t going to post it at the restaurant, then they are going to post it on yelp so others can know

While agree with you, service can be an absolute deal breaker. Especially when you’re in an area that has so many establishments to choose from, bad service will most likely result in a one and done unless you’re absolutely blown away by the food. I can’t speak for everyone but I know I rarely give a place a second chance when I spend my money and I don’t feel as if my business is appreciated.

There is nothing worse than paying a large sum of money on a cheap meal just to feel stressed and unwelcome. This place charges $38 for a pork shank with a potato, $12 for a piece of bread with cheese on it. Just because I'm bored, the pork was likely item 220511 off that Napoli truck. Not saying it's bad or anything, but I can microwave something too. I'd venture to guess this place makes insane amounts of money selling an experience, not the food. Reviews based on service are always valid imho

Ratings can be ridiculously wrong sometimes. The best Chinese food restaurant in my city by far has the lowest rating by far. It’s ridiculous sometimes but that’s why it’s important to try places.

Braised pork by definition won't be medium rare. If it's cooked at a low enough temp, it'll maintain a pink color even though it's cooked all the way through. It's just something that happens with some slow cooking methods. It has to get to fully cooked FIRST before it can get to the point where the meat is falling off the bone like that. In reality it's past the point of well-done because that's when the connective tissue of the meat starts to break down. If it was cooked for a long time at too high a temp it wouldn't retain any moisture. The pink color in this is just a scientific reaction, it doesn't mean it's undercooked.

Pork is used a lot in Italian cuisine. I believe in Italy pork is consumed more than beef or chicken. My Mom always makes her homemade sauce with pork, so I grew up thinking that was just the norm lol. But in general lots of pork in Italian dishes- pancetta, prosciutto, salami, pork roasts, pork loin, pork stew, breaded pork chops, braised pork, pork rotolini, sausage- I’m sure I’m forgetting some lol. I wasn’t a fan of pork growing up, but it was a staple in our house for sure! Hope that helps.

Some slow cooking methods create a pink color when done correctly, if the temp is low enough it’ll stay pink despite being well-cooked. Braising by definition means several hours of cooking. There was nothing wrong with the pork. Same way there’s nothing wrong with a smoke ring on brisket that’s been slow cooking for a day. It just means it was done properly. The bone would not have come out that easily if it was underdone, it would have stuck to the meat. It would also stick to the meat if it was overcooked at too high a temperature but that’s clearly not what happened here. They kept the temp properly low. Editing again to add: connective tissue cannot begin to break down like that unless it gets PAST the point of fully cooked. The bone slid out because that chemical reaction happened and the *connective tissue* broke down.
