Directions:
Cook Temperature: 275º-300º
BGE Plate Setter: Yes
Cook Time: 3 hours, round 1
pull, wrap in foil & put back on BGE
1 hour, round 2, target internal temperature 203º
open foil, add sauce, leave on BGE for about 10 minutes for round 3
Prep Work: trim ribs, apply Yellow Mustard as binder and your favorite Rub
Wood Chunks: For this cook, I used Cherry & Pecan
