Except that it has yeast. That basically throws gluten free out the window. The reason being if you are allergic to gluten, the odds are your digestive system will not like yeast as well, since it will not be able to tolerate yeast being a toxic fungi.

Maybe the rice fours are VERY different, but with these amounts it became firm not fluid. I've added 25% more milk, so it is similar now.

Lovely recipe! Is the mizo hochikara a short grained sticky rice or a long grained fragrant type? I am in India and I tried making this today... it rose beautifully but after it was baked it turned rather dense. I used the regular rice flour. Could you please let me know what type of Indian rice (basmati/ sona masuri/ etc) would it be closest to? Thanks

Mizuhochikara is a short grained sticky rice. I am sorry but I don't know what type of indian rice is close to mizuho chikara but if you can get short grained sticky rice and make it powder with blender or something, it could be close to mizuho chikara! It might be gluten free, but is far from being toxic with a bad digestive system since yeast is added. Yeast is a fungi and will probably be recognized as a toxic fungi if you require a gluten free diet.

To substitute the yeast: mix 3/4 bicarbonate soda to the flour. Then 1 and 1/2 tbsp vinegar to the milk. Rest is the same❤

As others have mentioned followed recipe and end result is more of a stiff cake batter than the loose dough the video gets. Will try 25% more milk as others suggested next time and come back to advise result. Did not add any extra first time and it did not rise during proofing and when baked ended more like a Ciabbata bun than a loaf. Still tasty never the less, definitely going to keep perfecting this to local ingredients. Thinking it's probably something to do with the way rice flour is processed in the West vs East (West like to add crap to processes to make it cheaper)

@@Rfkaz Same thing happened to me. Mine came out like pancake batter and would only rise about 1/4". Do I need more milk, or was it perhaps the arborio rice flour that I used. It's just plain rice flour with no other additives. Thanks!

Buy a food scale and weigh the ingredients instead of using measuring cups and spoons. It's a much more accurate measure for dry ingredients.

Can I use any rice flour? I just used almond milk and it turned out to be a sticky dough instead of fluid dough. So I have to add quite a bit of water and it didn’t rise double the size after two hours. Also it took much longer to bake. Any tips please ? Thanks
