Hrm...I have store bought casing and I never dried them. I just stuffed it but man it doesn't cook well. The casing remains gummy after steamed. So I may have to blow and dry it like the fresh ones.

My grandma passed away over 20 years ago. She loved eating rice sausage and I can still remember the slight salt and ginger taste in her recipe. I’ll have to see if I could make her recipe this summer. Thank you for sharing. ❤

Yep, love rice sausage, but I rarely make it since it's very labor intensive. Also, any inexperienced person will overfill even though they don't think they are overfilling (been there, done that 😂). Love, love, love rice sausage since it's very much a nostalgic food for me.

Wow haven't seen or heard anyone make these in ages! I remember my mom making it back then. I didn't like it at the time, but since I'm a lot older now with a difference sense of taste I would want to try it again. Use to hate boiled bamboo shoots with pork, and stir fried bitter melon with ground pork but now I like them. lol
