Okay. For those unfamiliar, this recipe isn't the same as Chinese rice wine or sake which has a different method, this method is akin to using a locally available starch rice as the flavor agent. The sugar is what is converted, the raisins are yeast nutrient, lemons lower the acidity so the yeast stays active. Chinese rice wine uses glutinous or sweet rice that is broken down by a specific yeast and mold combination.

i used the active dry yeast which is brown in color and the one that i'd made turns out to be brownish in color also? is it alright? i just follow the instructions but how can i know that i made a good rice wine?

You can feel the strong taste of sour. Hope the level of yeast used is moderate.

It seems like this would be better if you did not add sugar and instead used a rice levan to turn the rice starches to sugar and get more rice flavor.

The reason for us to add lemon juice along with the skin is to narrow down the process of fermentaion and also to discourage the specific bacteria and fungus formation.

Rice wine may have a mild pungent smell. But if it is so unpleasant smell, would request you not to take chance.

Rice wine does not require sugar, raisins, lemons, bay leaves or cinnamon. Just rice, water, yeast.

@@Doorbell_RingandTell 1. Wash rice 2. Cook rice 3. Let it cool to body temperature 4. Put it in a sealable container with an airlock ("bubbler") 5. Add crushed koji ball OR brewing yeast & alpha amylase enzyme 6. Seal container 7. Keep it at about 27 degrees C for 3 weeks, or longer if cooler (it's done when the rice and liquid have distinctly separated) 8. Strain and bottle.

The yeast bacteria has to be used at a moderate level. The more you use it may create more intestinal gas.

Hello There, Best to keep it for more than 3 weeks, initially it may taste like a toddy flavor,over the time, taste gets changed and you will definitely like it. Alcohol depends on the fermentation process, it may go upto 18% ABV.Thanks
