I made this Tomato Soup. The first time I made it I used a potato masher but ended up purchasing an immersion blender which done wonders for the soup. I made this recipe for my wife while she was recovering from surgery. Now I'm making it at least once a week because we both enjoy it so much. It really is so easy, yet delicious. For someone like me who has only moderate confidence in the kitchen, this soup is an ego booster. It's great to taste something and think, "Wow! I did this!" It's even better when the person you love says, "Make me some more of that." :D

I made my first tomato soup a few months ago and it came out phenomenal! Used fresh tomatoes from our garden, three sweet peppers, two Vidalia onions, fresh baby carrots, garlic, sugar, I cooked it in butter with no olive oil, used cottage cheese as my thickener along with cream cheese, seasoned as we like, water was my liquid. My child said she doesn’t ever want canned soup again. Thank you for sharing your version of the recipe.

Fun tip if you blend it over the heat it helps prevent the fats in the olive oil from separating which is what would break the sauce and cause that bitterness and as long as it's on the heat you can add a small amount of water, butter or both to help pull it back together

Made this a couple weeks ago when snowing also. Had nice thick sliced bread grilled cheese sandwiches with it. yeah! I roast a bunch of veggies and tomatoes in my dutch oven in the oven, then blend, then add sauteed onions and garlic. Blend and voila - excellent soup.

I'd love to know as well. Most canned tomatoes doesn't have many seeds, but using fresh tomatoes there are alot of seeds. Seeds make soup, salsa or whatever bitter... So I wish he would answer your question! @@oneitalia2312

Just made this tonight! I added rosemary, thyme, and oregano on top of basil. Additionally I used avocado oil in place of olive oil and it turned out really yummy especially paired with thick and cheesy grilled cheese. Thank you for the recipe! It's a keeper for sure! And it is wonderful on a cold fall or winter night.

Absolutely genius. Idk why I never considered that. I usually just use vegetable oil to negate the olive oil issues. Never had bitterness w the veggie oil. I’ll try this next time for sure makes total sense.

I made this tonight for my BF and it came out EPIC. I put in extra olive oil and simmered the onions on low het for 30+ min then the garlic like you said (I used minced garlic in a jar), then after adding in the tomatoes I added the 3 cups of broth, I made the broth from beef bouillon and I made it strong! Tossed in a healthy amount of Italian seasons and thyme - BAM! Let it simmer for about an hour and then used the submersion blender gently. WOW it came out good. This is something that was much easier to make than I realized! edit: oh yeah I didnt use any cream because I didnt have any ahhh

We are preparing a dinner party tomorrow and making this soup tonight and also a tried and tested hummus recipe, which we have been making for years. I love this channel. Always gives me new things to make. My family grows and cans tomatoes so I used those, and decided to add a little tomato paste to the onion and garlic before deglazing to increase to richness tenfold lol

Hi John, you can add a shot of vodka to enhance the flavour of the tomatoes even further as certain flavour molecules improve their flavour through the presence of alcohol. Also, I would add some basil and/or parsley stems for some complementary herbaceous notes in the background. Extra Virgin olive oil is not really intended to be heated for extended periods as it will make the oil bitter, instead use a lighter olive oil or a neutral oil.

I used bacon grease instead of olive oil. And threw in a few little pieces of the bacon, as well. I put some red pepper flakes, and cayenne in, for a kick. As well as some dried herbs. It came out great! Thanks for the lovely recipe. (I also made your Avgolemono, from your book. It was very good. Fed us for a few days. 😊 I really appreciated that you taught how to make stock as part of the recipe. There's lots of fun stuff like that in your book.)

I tend to add sun dried tomato’s stored in olive oil, a good splash of balsamic vinegar when cooking my onions and garlic but I let it cook out like if you would be cooking with wine I also add my left over Parmesan rinds for extra flavour. But otherwise pretty much the same as you! Great video! I serve mine with a good greeting of Parmesan and good quality ciabatta

I’m obsessed with anything tomato - soup, sauce, or just tomatoes on their own. They’re so tasty and so versatile. This soup looks fantastic and the dash of cream at the end must be heavenly. I might be tempted to add just a little Worcestershire sauce, too, or a bit of Cholula hot sauce.

Love that you mentioned canning your own tomatoes for this type of soup. Did wonder if you do composting, noticed your onion and garlic skins next to your cutting board. I have a enameled bowl that I keep a lid on for compostable stuff, my hubby takes it out to one of our compost piles as needed. Sometimes more than once a day when processing a great deal of fruit or vegetables, such as canning day. Soup looks wonderful!

If you freeze whole tomatoes, when you thaw them out, the skins peel off without to much trouble. Less hassle than bottling them.

Don’t use extra virgin olive oil, it’s not intended to be cooked with for so long and gives you a bitter result. Just use soft yellow refined olive oil, there is nothing wrong with it. It also emulsifies better with the blender.

Extra virgin olive oil shouldn't even be used for high temperature cooking from what I know, it gets the molecular structure altered and transformed into smth that's not great for us from what I can remember.

Looks delicious. I've been playing with these same ingredients, trying to get something like Campbell's soup. Instead of 1 tsp. sugar, try 2 T of molasses! It's delicious. Other favorite add in's: lots of fresh rosemary, thyme, curry powder, coriander seed, ginger, a shot of sherry or vodka to deglaze after the onions sauté.

We fully carmalize the onion and garlic, lessening/eliminating added sugars. Also if you are using 1 or more large onions, they will cover the bottom of the Dutch oven by a half inch or more. We put our garlic on top of the onion as soon as we start the sauté on the onion. Then, covering the Dutch oven we let the garlic steam in the onion juice (on top of the onion dice and never touching the oil) for 7 to 8 minutes, so that by the time we do the first stir on the onions, the garlic mixes in beautifully and never seems to burn. This creates a caramelized Ragu of the onions and garlic, which we will sauté as long as 10 minutes with a Dutch oven lid on, releasing most of the sugars. Also, we love the San Marzano tomatoes. But we would pulse those in the food processor to get the consistency that we desire, before adding them to the Dutch oven. And this way you have much greater control over the consistency of the tomatoes., before it is combined with the olive oil, eliminating the possibility of any burning to the olive oil due to the friction of the blades on the processor. Other than these personal preferences, we really like your recipe. Thanks for sharing.
