Thank you for sharing your cheesecake tart. I really love your crust recipe and can't wait to use it. Most people use graham crackers here in North America, which are bitter and disgusting. Your tart shell recipe will be good things like lemon curd, vanilla pudding, and pastry cream.
What are those little stones shes putting in when baking?

They're weights to stop the pastry from getting puffed up in the oven when baking with no filling. If you don't have them you can use dry rice or dry beans instead
