Soborodon is fantastic, it's one of my weekly go-to meals. I usually just do it with ground pork with a 1:1:1:1 ratio of soy sauce/mirin/sake/sugar with plenty of oroshi ginger and garlic and lay either some komatsuna/baby bok choy/other green veg on top. I normally don't buy eggs or eat them really, but I'd be interested in trying it out.

Food really is love and makes you feel as though you are home when you are away. Ahh this is one of my favourite dishes to eat (in fact I just had it for dinner so it's so weird this video came up on my dash). The sweetness of the sugared eggs, the saltiness of the chicken and the veggie taste together is always so good. Ingen (green beans) is what I usually have with it. That's the way the school I work at always served it and I love the way green beans taste in general, but I'd like to try snow peas some time now too.

I've never had with snow peas before, I make with either wakame, nori or spinach but I'll try with snow peas for sure. I think the snow peas are regional, I lived in Kitakyushu and it is a very popular ekiben.
