Love the slice. Have made in the past without oil. Must try it with oil. Have AGM Monday week so l might do it for the lunches.

Thank you for taking the time to watch my video Rosemary. The oil adds lightness to the batter and helps the crust to brown as well - similar to when making shepherds pie and using oil in the mash rather than dairy

Beautiful recipe and easy to do but I thought you have to let the water out of the zucchini is it necessary or not

You are absolutely right, you usually do but in this recipe, the zucchini gets cooked in the oven and the water evaporates while baking!
