Rigatoni with Pork Rib Guazzetto - This is a great dish for a weekend family dinner. If you combine pork meat and tomatoes, you’ll end up with a great pasta dressing and some meat left over for a second course. In southern Italy the traditional Sunday dinner has a piece of pork seasoning and peeled tomatoes. With the addition of some dry pasta, in two hours family dinner is ready. Thank you for the video. That's what people don't get about cooking with bones, marrow or even brazing the meat because it brings out so much flavor to the dish it makes it even better.

Such a Wonderful recipe to make and enjoy eating I have done the same recipes with leftover pork chops and fresh pork I had in the freezer I forgot about. 😊😋🇮🇹🍝🍝

I remembered how I loved my mothers pork ribs in her sauce recipe and I'm about to make another batch today and I'm sharing their recipe from Lydia which I think will be great. The other message is that we have sitting at the house a counter cheese slicer that we bought for you for Christmas but because of all of our holiday cancellations it's still at our house. My mother in law made her sauce like this with various meats. She called it her Sunday gravy. For some reason she never put the onions in it. I’m not sure why. Maybe she didn’t like onions?? I made it like this for my Italian husband husband for 51 years. I didn’t use onions either because that is the way she taught me.

Meat (any kind) is not near as good without a bone left on it. Try telling the meat markets, groceries & butchers that! They do not listen!

My grandma taught me to add salt to the boiling water, break the spaghetti or linguine in half and stir occasionally to keep the pasta from sticking together and al dente of course.

Some people like the bone in and some do not this is an individual’s preference . Each to their own preferences.

Made this on the weekend. I finished in a 300-degree oven rather than stove top. Added chicken stock at end to loosen this beautiful, rich sauce. Served with white beans, a dollop of burrata, and a salad of fennel, grapefruit, and escarole on the side.
