Afterwards he absorbed veldora to evolve to a new race: Ulimate Slime. (This is similar to a true dragon but a bit superior). Apparently Gluttony is his skill Predator evolved into it after the battle with the Orc Lord. Gluttony has 4 of the 5 effects of Predator (Analysis got transferred to the Great Sage), and plus 3 more, where 2 of these 3 is related to giving and receiving abilities to/from his subordinates. You have to remember, all these skill evolutions - for example Rimuru getting Shizue's Degenerate skill when he absorbed her was not lost when Great Sage asked to "sacrifice" Degen to evolve itself in the Harvest Festival. Instead, it is combined with new skills (or here, an "A.I", also called a wizard/sage). You will notice that Rimuru can still use Degen to manage his skills.
