Hi mam! This recipe is more of a star hotel mushroom manchurian recipe than roadside kaalan. In roadside kaalan they will not be adding soysauce infact in many roadside stalls they don't even use kaalan at all. They just use finely chopped cabbage dip it in red maida+corn flour concoction and fry it in such a way that we all think it's kaalan. Many shopkeepers have themselves told this as it's part of their business strategy and cost cutting method. Moreover they add chicken masala or mutton masala in addition to garam masala. Anyways appreciate ur efforts. Recipe was nice. 👍
