mum usually makes the lamb shoulder... she stuffs it with garlic, chopped parsley, small pieces of butter here and there, and of course the typical seasoning; black pepper and salt.... omg!!! my mouth is watering!!!!

#kitchenconundrums I'd like to suggest a video on how to work out timings. For example, planning an entire meal or if you have one oven and two dishes to cook, what are some ways you can do that? Averaging temp, shorter cooking time for one, queuing etc. ps, I love all the conundrum videos, keep up the good work!

Got to say I really like your show. The only thing that would lift it from "great" to "perfect" would be you guys providing us with SI conform annotations for all your measurements. This is the perfect recipe for leg of lamb. I'd serve mint jelly with it just because my family has always done it. Leftovers from this roast will make delicious sandwiches.

Excellent. It's about time we brought the roast leg of lamb into the forefront as its been languishing far too long in the back. In extremis, I have marinated my leg, in the fridge with a whole packet of fresh rosemary for two whole days. I used Julia Child's recipe for the marinade which you have copied but left out a dash of soy. It was sooo delicious, my three guests all wanted seconds. Thanks for contributing to making the World a much better place!

Lamb is best medium rare. Why would people say to overcook it to well done. Thomas does this perfect.

I'm puzzled. Why did you roast the potatoes first (to the point where they were almost overcooked), then put the meat in? They'd have been frazzled by the time the meat was done! Bit of a camera trick, I reckon.

Cooked this way (i.e. rare, pink, juicy), it shouldn't need any sauce. But if it's been overcooked or you really want extra "juice" you can take a quarter cup of red wine and deglaze the cooking pan, scrape up the juicy bits, then pour that over the sliced meat.

Very heavy handed with the salt. I made a roast the other day and followed the chef's advice and used salt liberally (more than I would ever do on my own) and the roast came out too salty. Never again. You need to taste the meat, not the salt. You can always add salt, but you can't remove it.

Sure, 150-165 F if you want it "well done" (aka really overcooked) without any red or pink. But if you want a juicy, pink-center meat, then 130-140 F is going to be better. Even 120 F with some resting time is just fine for rare lamb.

It's totally fine, it's just cooked to the rare stage - nice and pink in the center, juicy and tender. People who cook meat to the "well done" stage are really massively overcooking their lamb, as it won't have any red or pink and is unlikely to be juicy by that time.
