I've just discovered spaghetti squash a week ago. After 50+ yrs of eating pasta, I love the flavor. Ive made it two ways which were awesome. First is as follows: Sliced onions, garlic, olive oil in sauté pan. Once almost brown I added a can of tomatoes or use diced fresh tomatoes. Once that's heated add the shredded squash, toss and serve... The other day I fixed an oriental version. I sauted onions, garlic, then added 1/2 pkg of Campbells Skillet sauce, Toasted sesame, with garlic and ginger. Once heated, I added the squash. Drizzled a bit of soy sauce....Oh my....

I cooked this a lot since last summer when I started the Paleo diet, and have experimented with different methods. One thing I like to do is after roasting and shredding it is tossing it in a saute pan with a little olive oil and some different colored bell peppers and get a little crisp brown color to it and a few minutes before it finishes throw in a handful of peeled and cleaned shrimp and a little lemon zest and enjoy!

Just made this for dinner for my husband and myself. It was really delicious and so easy to make. I made it with organic marinara sauce with organic turkey meatballs added to the sauce. With a side of garlic toast. I highly recommend this recipe. Will definitely be making this again. Very filling but don’t have the bloated feeling like regular pasta. Two thumbs up!!

I find that sometimes the under layer of the squash meat cooks too much so I puncture the back to vent steam out so it wont over cook the inside. Love this stuff, if your trying to get away from flour it helps so much. Also I use unbleached parchment paper, works really well for me. I like to toss mine with some fresh chopped garlic and small amount of olive oil in a hot pan before serving and it smells so good. Your videos on this have helped me a lot. Thank you!

i know this video is kinda old but i just bought and made my first spaghetti squash. i loved it hot, tossed in some olive oil and garlic, also loved it hot with some fresh herbs, but my favorite way now is to eat it cold right out of the fridge after roasting and shredding. it tastes almost like a raw vegetable and the crunch reminds me of salad. i love it!

Picked it from our garden last week, used the microwave (should have roasted it but time was an issue) and mixed it with large shrimp and a little oil/garlic and garden fresh basil and parsley (Italian long leaf). Gotta go easy on salt but added some pepper and parmigiana/pecorino/romano. Molto bene.

The way you cut the squash was genius! Spaghetti squash is currently one of my favourite foods- when it roasts in the oven until the skin browns, the sweetness of the caramelised sugars in the squash makes it so delicious, I once ate half the squash, and would have eaten the other half if I had not stopped myself. A pinch of salt was nice warm, but later, I simply topped the chilled squash with a dollop of Greek yogurt and some berries, and I was a very, very happy girl that evening. My only problem is actually cutting the squash. Thanks so much for the tip!

Thanks for all you do, not only have you helped me in times when I've strayed off track, but you've shown me ways to get my wife to eat vegetables-to like brussels sprouts, butternut squash, sweet potatoes........and if I could get her to eat beets that would be amazing- working on that, lol.

Mine tends to retain a little bit of moisture, not sure if its the climate here [Pacific North West]. Gonna copy exactly your method and then try to use that as a base line and adjust from there to get it more dry. I saute mine in a bit of xtra virg olive oil [Spanish has a wonderful smell] and fresh chopped garlic after roasting. So far have to brown the garlic just a tad first as the moisture in the squash is a bit too wet. Great video thanks!

The way you cut the squash is by far the best. My recommendation is to use a mitt, glove or at least a wash cloth on the non-handle side of the knife. If you slip a little, the tip of the knife could easily lacerate that hand. Using a long thick blade that has been sharpened nicely is great because it will "cleave" the lobes apart better.

I've only just discovered how easy it is to make spaghetti squash. I'm one of those people that are fearful of trying new things (when I don't know how to prepare it). However, KZbin broadcasters (like you) make it easy. I've only made it twice and that was in a pressure cooker. It's so delicious! Only thing is, I didn't season it before cooking. Today, I am going to try it your way (roasted) and see which one I like the best. :)

Yum, I'm going to have this tonight! I bought one at the grocery store a few days ago & will eat it tonight. I tried making one a few years ago but it didn't work, like I cooked it but it was still hard in the center. I guess I didn't cook it long enough or did something else wrong. But I'm going to put tomato sauce & parmasean cheese on it, just like spaghetti-that's how my dad used to make it & that's my favorite way to eat it!
