I have roasted a lot of sweet potato cubes and froze them to have them handy, , so I do not have to wait when I crave for it! I used pomegranate, which takes the recipe to next level and I also added purple onion ! So so good! We made the salad for Thanksgiving dinner, and everyone absolutely loved it, including my teenage son who does not eat vegetables!!!!! The dressing is divine and don't forget the goat cheese cuz it just adds that creaminess to the tang and sweet of the dressing. Yumm!!! It was so good, I ate the leftovers for breakfast this morning with some honey ham mixed in. It really did hold up well overnight, even the apples were still yellow. I think it was even better the next day. My son got some more this afternoon for lunch. I have told everybody about it and I'm sure I will be making it for other get-togethers as well as dinner in general!!! Thank you for such a wonderful perfect salad!!!! 😍🥗🤤 Nam nam mmmmm!! My husband just told me he just ate the last of it. 😩 Sad. Lol.

What I’ve noticed is that people don’t eat it for the main dinner but 2-3 hours later, people will start eating it when they get hungry for a later afternoon snack. By then, the greens have the perfect texture. Even the men love it.

I made this for Thanksgiving and everyone loved it! Even my boyfriend who doesn't love vegetables and was scared of the kale. And his picky 17-yr old daughter. So delicious....mmmm creamy goat cheese and the roasted sweet potatoes. The salad was just perfection. However, we were all extremely gassy the rest of the day from the raw kale...annoying, but pretty comical!

Tried! Amazing salad, probably the best I have done in my life. Also never tried kale before and it is surprisingly good, although still a bit tough on bite after 30 min in the dressing. Thanks a lot for this recipe! Definitely to be saved and used often 🥰 also it doesn’t look ugly at all when mixed. Thanks to kale keeping form/shape it actually looks very fresh and inviting. Natasha, could you please recommend how to best serve it? I mean what dishes will work best with it. Although it is good in its own, i feel like something to the side would be nice.

If you massage the dressing into the kale with your hands, the kale will be softer. I always massage my kale with a little bit of olive oil and let it sit for the time it takes me to get the rest of the salad components ready. I then still add the dressing on top of that and I always get tender kale that is NOT soggy.

From the bottom of my heart I want to thank you for this recipe! I’ve made it a few times now and it’s by far my favourite salad. In Canada we have this restaurant (Boston Pizza) and on their menu, they have a beet salad, very similar to yours but I have to admit your salad surpasses them. It is not only a holiday salad but an almost an everyday salad. This salad is so tasty that it’s like a party in my mouth with every bite.

i take kale and chard stems, chop really fine, saute with onion, tiny bit garlic, ...can sprinlkle into scrambeled seggs, a salad. yummy to add to lots of foods. and no wasting that nutrition of the veggie
