this is such a great idea to use up any veggies you have in your fridge that might be on their way to going bad! you could even toss in leftover small parts of veggies that aren't enough to use in a full recipe. and if you have like a fourth of a jar of marinara sauce leftover this is also a good way to use it up. i love this idea for cutting down on food waste.

There are a lot of ideas you can do to repurpose your leftover foods in the fridge and leftover parts of veggies than let them rot. :-) This recipe is one of them, and it's so delicious!

I made this a few weeks ago, it was just the recipe I was looking for and I'm not even vegan but it's a healthier way to deal with my addiction to carbs. I'm still going with regular pasta but that sauce was amazing! It was a bit on the chunkier side because I only have a small handeld blender but I didn't mind the texture it was quite nice but the time and effort and cleanup...lol. However this recipe has me eyeing for a proper blender in order to make this more often and some soups and big batches of pesto to freeze for the future. Thanks for sharing your recipe.

Emily Scott i think any plant based milk would work fine. if it’s too thin, you could always add some cornstarch and let it simmer until it thickens up

A excellent pasta recipe that is whole plant foods based or vegan. I would just not use the oil because I am trying a oil free diet.

Don't agree! Oil helps all the flavours to really pop out and makes it really nice and creamy! Plus, olive oil for example is pretty healthy ;)

It might depend on the brand of coconut milk you use because different brands have different levels of actual coconut in them.

Did you try? :) I‘m trying to cook with no oil for health reasons but I keep going back to oil because besides when I throw a lot of (too expensive) nut butter or coconut milk in it, my oil free recipes just don‘t turn out very good. :/ It‘s probably also a matter of getting used to the taste, but with occasionally going out and also having my omni boyfriend eating with me it‘s a little hard to only eat super healthy. ^^“
