Shiitake mushrooms 😭 they are fine to flavour a broth or whatever but to actually bite into one is 🤢 I love most other mushrooms so I’m not sure why they are so vile to me.

Two small bits of info if you are watching the budget .... Buy a block of solid coconut ..... Coconut milk is made up from around 10% solid and 90% water .... You can reconstitute a small portion of the block by adding water. It lasts for weeks in a block. You can also make it as creamy as you want. It is a fraction of the cost. And blitz up your own chick pea flour .... It is very easy to do and is around a tenth of the cost of bought versions. ;)

One other thing to add is, as you may be aware, we need to be careful where we buy coconut products from. Many or most plantations iin Thailand use enslaved monkeys to harvest the coconuts. I wish I was making this up :-(

I made your Penne alla vodka so many times I have the recipe memorized. I add some vegan meatballs to the pasta. My husband is a huge meat eater, in fact anytime I am making a meatless dinner he cries out, "what am I going to do without meat?!!" Yet, when I make this pasta he never whines. In fact, he requests this dish, and has even contemplated going vegetarian because this dish has introduced him to how amazingly delicious vegan dishes can be. Thank you!!

I normally don't like asmr type recipe videos, but yours are paced perfectly. It's also very cute how you sneak the items into the frame. It's delightful. I'm not vegan, but I make your recipes sometimes! We enjoy watching! San Marzanos--yes!!! And buying them whole, then crushing yourself ensures quality--no pieces and parts.

I throw in some shaved fennel, home sun/oven dried tomatoes, zucchini, capers and for extra proteins and micronutrients a hand full of chickpeas. I don't care if it is not a classic dish, but it is richer and more filling. For the shroom pasta I add some veggie meatless balls made from shrooms, shaved sweet potato, oats, nuts, scallions, bunch of fresh marjoram/thyme and some chickpea and flaxseed flour for binding and extra nutrition... Good job with the channel Andrew, big shout out from Serbia :)

I so appreciate this! I'm the only plant based eater even in my house! I don't cook meat even for the rest of my household but for birthdays and holidays I make meat for them and plant based alternatives too for anyone wanting to try! It's so important to me to make my family still feel welcome and loved and it's hard to know how to balance that.

Really love your videos and cooking style. Being Italian I grew up watching my grandparents and mother cook pasta sauce down for hours so I completely understand how different sauce can taste once it simmers for a bit (not hours!!). I will try both your dishes for a family gathering. I’m the vegan in the group so I have to bring things to family meals.

I honestly hate bow shaped pasta (which always cooks unevenly) but I guess for the second recipe, the shape can be altered without a great loss in experience :D The flavours seem amazing, the texture of the sauce just so silky and hey, we gotta appreciate the fact you used mushrooms in a recipe out of your own will!

Hi Andrew, I just saw a few of your shows, they were very helpful. I moved from California 3 years ago, to N.E. Ohio. In California there's fresh produce in all the stores, salads are a thing. In Ohio people eat meat, there are very few stores that offer organic produce, coconut milk etc. I'm still looking for a store that sell bulk walnuts and other grains. You mentioned Aldi, in one of your "episodes", I went into an Aldi once and it was super small, and their produce looked "sad". Maybe I'll give it another try. Thanks for the great content! Carol

I’m sooo happy you went in detail about how you feel about mushrooms. I’ve tried to explain this to people on multiple occasions. While I understand what they contribute to a dish, I still don’t like them. so when I’m cooking them, they must be chopped very very finely so that I cannot detect them 😂😂 idc if that makes me childish. I’m compromising with myself here!

Your videos are really fun to watch. I love the style, the overhead camera angle, the sound effects while you're making the dishes, and even the choice of background music. I also love the way you both complement and criticize your own dish at the same time. I would turn off the background music while you're speaking, and only us it during the cooking section, so it doesn't get old. I'm also wondering what mic are you using to get that crisp sound of the clicks and chops and dishes sliding around while cooking?

Thank you very much for the inspirations, being a seasonal vegan (winter prices for fruits and vegetables here are way higher than meat ones), always good to try something new. Gotta admit that vodka + coconut milk was the killer, the milk doesn't curdle with vodka as i have noticed. Tried switching penne for buckwheat and chickpeas pasta, worked even greater. Gotta give asparagus pasta a try too, when the forest mushrooms season starts in few weeks.

Adore your vibe. Had me giggling over your take on mushrooms lol. I've always been the same way with it and wonder why some folks even put in Lasagna. Although I did have it in a risotto once and it was heavenly. So because of that it's not totally a no fly zone/ no-go for me no longer however open to it sparingly lol like you mentioned if cut so small and thin that it becomes hardly existent haha. I feel the same way that you do about mushrooms. Don't like the smell, taste or texture. I might as well chew on a rubber ball. Maybe cutting them up small would work for me as well. I have a hard time working with asparagus. I think adding them to a saucy pasta dish is a terrific idea. Thank you for (maybe) starting me on the slow road of mushrooms 🍄

I dont at all LOL. I have had the same bottle for 7 or 8 years. It was given to me at an event and i needed to figure out how to use it, so i started experimenting in recipes. vodka is great because it doesn't expire but if i was to try something else out, i might go with a apple or peach cider.

For mushrooms, a great tip from Chef Jean Pierre (Teacher & KZbinr) is to cook them until all the water is gone completely. Salt them to draw out the water. He said many people who dont like mushrooms, like his mushrooms. And it is bc he gets rid of all the water in them.

That creamy pasta base in the beginning would convert me to anything, vegan, no_gan, any_gan... I'd follow anyone to anywhere. Just amazing looking. Perfect colour. Perfect texture. Wouldn't even bother with the pasta, 😄 With the 2nd recipe I started off thinking, Asparagus, meh, but then you chopped all those mushrooms and I thought ooooohhhh. I wouldn't have thought of it, mushrooms and asparagus. Looked really good in the end. ( They all do)

I feel the same way re mushrooms as you. When every I get a recipe with them I usually sub with zucchini. It will give the same texture once cooked. Not the same umami though.

Learning a lot from you guys, making vegan a lot more interesting for me! Same for me with mushrooms but I don't care for Tofu at all, I think it's a texture thing :(

Okay I didn’t have any vodka but this is AMAZING!!! I should’ve bought triple the ingredients. I’d have this three times a week if I could.
