Maanchi, THANK-YOU for washing the chicken so very well. There are those who say the chicken should never be washed because it splashes bacteria around the sink. My belulief is, If the sink is washed also then it is clean! I'm 72yrs old. As a young wife & mother at 25 yrs, I was appalled when I opened a package of ribs and discovered that it was covered with nasty wood shavings on the underside where it was not visible. Obbiously, The meat had been dropped on the floor, picked up and packaged. EWWW! When I mentioned this to my uncle, a butcher, HE TOLD ME that dropping meat then packaging it is COMMON and HE TOLD ME to ALWAYS WASH ALL MEAT before preparing it BECAUSE OF the BACTERIA and DEBRIS on it. Yes, like you, I am a fanatic about washing food, hands and kitchen areas. THANK-YOU for emphasizing cleanliness in the kitchen!

Yes, that might have been common 50 years ago. However, if that happened these days there would be a serious lawsuit against that factory. Washing meat is definitely not necessary.

You don't wash chicken because the bacteria is going to be cooked off in the oven. It's more dangerous to splash chicken bacteria water around the sink.

I made the cream cheese dipping sauce tonight for tomorrow's roasted chicken (we were asked to cook it at the school. No time to prepare the dipping since the class if for only two hours) and I'm telling you... IT'S THE BEST DIPPING SAUCE EVER! The saltiness of cucumber, the sour and cheesy flavor... daaaaaaamn. All meats of non-endangered species and that don't contain heat-resistant parasites/diseases can be eaten. You can't take the moral high ground if you eat other animals. It shouldn't be that different from eating all other kinds of meat. My family keeps chickens as pets and once a year the weaker roosters get slaughtered and the meat is either sold or eaten by us. Just because dogs are pets too doesn't mean it's any more barbaric to eat dog meat than cow, pig, fish or chicken meat. If your problem is with cruel dog farms you have a right to be upset, but then it's only fair that you should only eat free range organic meat when you eat other animals as well.

Dude I would have a hard time eating a pet chicken, let alone dogs. Livestock intentionally raised for slaughter is a different story, psychologically speaking, but put me and my family in a survival situation and I will be hunting the neighbors dog in a heartbeat. This might be where bosintang stems from, as a lot of Korean dishes come from a time of real poverty and survival. Now some of the old people of Korea look for it with a nostalgic appetite, but it turns off most of the younger folks. My guess is that bosintang will become extinct within a few generations.

Merciii énormément car j’ai fait cette recette 2 fois maintenant et ça donner un poulet totalement parfait réellement d’habitude j’aime cuisiner avec un poulet entier car à chaque fois je fait n’importe avec ( c’est pas cuit à l’intérieur...) mais avec cette recette ,juste parfaite bien croustillant à l’extérieur et bien fondant à l’intérieur de plus le poulet reste bien cuit et les os s’enlèvent super facilement merci pour cette recette franchement ❤️❤️

@Maangchi, try this variation: Use a spoon to separate the skin from the meat, and put the garlic pepper salt and oil mixture under the skin. Then, put a cookie cooling rack over the sink, and use a pour-over kettle to pour boiling water over the chicken to shrink and tighten the skin. Flip the bird over, then do the same to the back side of the bird. After scalding the skin with boiling water, pat it dry, then rub some of the flavoring mix on the skin. For some reason, scalding the skin with boiling water first makes it turn crispy very reliably.

I am in love with this lovely , funny and warm-hearted lady`s cooking videos. Maangchi makes her recipes appear so simple, yet interesting at the same time, with different flavours and techniques. I adore her sense of humour! I am just about to try her Korean-style roasted chicken albeit I will be having mine with a baked potato (& butter from the left over massage!) and vegetables. I already know Maangchi`s chicken will be blissful to eat - that`s just from having prepared the marinade. The chicken looks so delicious and juicy. We wash our chicken, meats and fish as well before cooking. We use lemons or limes to rub then we rinse them very well and pat dry. It smells so good before cooking. Love your recipes. So Yummyyyy!

Wowww! Korean style...roasted chicken. And those side dishes....appetizers! Really awesome....yummy! Thanks for making this video. Yes I agree...the fresh crunchy cucumber plus the cream cheese/mayonnaise and fresh lemon extract. So much saucy indeed! And the pickled white radish (the Arabs like pickles of different varieties...mango/lemon/eggplant/carrots...even with the so-called TRUFFLES or any from the mushroom family. Yummy!

Oh this brings back so many memories ~ I was in Korea 3 weeks ago and I went to 오븐에 빠진 닭 and had the best roast and fried chicken in my life! Thanks for sharing this recipe, Maangchi! I am curious, since the lunar new year is coming up very soon, I was wondering if you can share some of the traditional Korean dishes you would normally make during 설날 ~ I want to impress my Korean friends :)

One time I had this really weird dream that Maangchi was running around on a wild rampage with a full-automatic rifle that shot fresh oisobagi Kimchi. Somehow she always skillfully landed each "round" in everyone's mouth, whether they wanted it or not. She didn't shoot me for some reason, and I became really sad because I love oisobagi Kimchi. Then woke I up.

Balala I thought about it for a bit and I'm pretty sure it was a result of watching the movie "Heat" while drinking way too much beer. After the movie was over, I was no doubt hungry and probably started looking through her videos. What strange things to put together in a dream though, huh?

I used my whole chicken to make dakjuk this week. My family has the flu, so that was soothing. But I'm totally making this roasted chicken recipe next week. 😋
