I am so excited! I love sushi but I am gluten intolerant. I have other digestion issues so I avoid grains. This can be problematic when making a sushi "burrito". But I am living proof that making cauliflower rice works beautifully in this recipe. The cauliflower was grated, microwaved and dried with paper towels and then flavored with rice vinegar, etc. as per your recipe. It was put on the nori which was on top of the bamboo roller s mat. Then we put all the vegetables, tofu and sauces, rolled it and ate it! It was delicious! I am so happy I get to have sushi burritos, despite my dietary choices. We actually grow wasabi here on our organic, no-kill farm in the Missouri Ozarks!!! And... I’ve been to Shizuoka many times as I was an exchange student in Japan living only a couple hours from there!!! If anyone is looking for a vacation spot, I HIGHLY RECOMMEND Shizuoka! It is a gift from Heaven above and the Japanese people are absolutely amazing. Love my second home, Japan!!! ❤️

I've had real wasabi, my sister in law, who is a chef, managed to find some real fresh wasabi and it was the most delicious thing. Really expensive, but well worth the money if you love Japanese food. 😁 Edit: spelling
