A quick look at how to pipe a rosette cake, full of tips for a perfect cake. Remember, this video is just tips for a making a successful rosette cake. It's very simple :) This type of piping needs a medium-stiffness in the buttercream consistency. If it's too soft it will droop. If it's too firm it won't be a smooth line.

Hello! thanks alot I really like your video, You mentioned i t was 6 inches cake which cake size pan did you use? Because I know the smallest I can find out is 9 inches pan . Any ideas Please need fo r a photoshoot

I'm so sorry I didnt see this when you posted it. You can order 6" round pans online, I buy then locally at places like walmart, joanns, hobby lobby, Michael's, etc. You can also create a dam in the pan, measure how wide you need it, use parchment paper and tape to tape off the area (like 2" high so it acts as a new pan wall) and it will hold the batter in that smaller area. Mária Dobrádiné Kuderna I can look it up, but a good rule of thumb will just be double the powdered sugar. And if you need a big batch you'll need more butter, ya know. For example, you'd use 200 grams butter and 400 grams powdered sugar. Google said a stick is 113 grams, I believe most people round down to 100.

Absolutely! Handheld mixers work and so does making it by hand. I mixed some by hand with a spatula last week :) #armday

Your rosette look great but I suggest in the beguiling you show witch piping tip to use on the bag to make rosette , and show with close up video your technic how you make rosette for people to follow your process because when you make ithem we can’t see the cake is in the front

So I will be doing this style this month. We will be putting a tiara on top. Any suggestions for the tiara? I don't want the rosettes to be smoothed. Your cake is beautiful!!

Set the tiara on top after you've refrigerated the cake. The rosettes will harden since they're cold, then the tiara can sit and not smoosh it all.

if you make stabilized whipped cream, yes it should work. you can Google recipes for that

Hi! Thank you for this... quick question... if I were to use the Wilton brand icing ... would this work? And if so, would stiff be better than the medium consistency? Also, is it necessary that I soften it up in my machine? Thanks!!

So yes, it will work. I would mix it on low for 2 minutes just to loosen it up and get it ready for use. If it is the consistency of like a betty crocker tub of frosting from the store, that is too thin. It should hold its form and not droop in to itself, kind of like how mashed potatoes hold their shape but aren't too stiff or too soft. Stiffer is better than medium/soft. Hi! How would you recommend storing the cake after frosting it? Room temp or fridge? I would need to make it, then bring it over an hour drive.... I would be so sad if the roses were ruined.

If it needs to be transported, 100% keep it in the fridge until you're ready to leave. A room temp cake will not transport well.

just one 8" round that is 3" high? if that is the case, 3 sticks butter and 6 cups powdered sugar should be close. if it is a rectangle 8x3 probably 2 sticks butter and 4 cups powdered sugar.

I have a question for u. My grandaughters 17th bday is coming up next month and she wants a rossett bottom tier and a quilted top tier. But she only likes Swiss Meraigue Buttercream. Can I use that for the rossettes on the bottom tier or can I add in some Meraigue powder in it to make it just a little stiff so the rossetts don't melt and or just fall off?

You can absolutely use Swiss Meringue for the entire cake.

Betty Crocker is MUCH thinner and will not hold shape, if you only want to use canned frosting you need to add powdered sugar to thicken it. Start with a couple of tablespoons and see where you are. It needs to be able to hold its shape so just add enough powdered sugar until it can. Happy baking!

Susanafox Fox I used the same consistency for the entire cake. If you feel like it's too stiff you can loosen up a cup or so by adding a little water for the crumb coat, then leaving the rest stiff for rosettes. I used 2 two-inch cakes.

I really want to try this for my daughters birthday cake this year. Frosting a cake is my weakness, it just never comes out right at all. Do you have a written recipe for the buttercream frosting?

Yes, we have an entire video dedicated to making the perfect frosting with the measurements we use, the link is kzbin.info/www/bejne/g3e3gGOipqqKgZI the recipe is easy to scale up or down. 1 stick butter, 2 cups powdered sugar, 1/2 tea vanilla, water as needed by the teaspoon. Then double, triple, quadruple, whatever you need for your project. I think for this 6" rosette I did 2 sticks butter, so then it would be 4 cups powdered sugar and 1 tea vanilla, water as needed.

There are frosting calculators online, but off the top of my head 1.5 lbs of butter (real butter, salted is better), 3 pounds of powdered sugar, extract, liquid if needed.

I have had rosettes fall off the side off a cake. How do you prevent them from not firmly sticking to the cake?

1. A chilled crumbcoat will act as an anchor. Don't make it too thick or it is only acting as a layer instead of anchor and the weight will pull it. 2. A firmer rosette won't wilt as quickly as a soft one. 3. Chill that cake at every step of the process, it acts as a magnet when it's chilled. It also needs to be settled before rosettes are done. At some point the room temperature factor takes place and it won't survive no matter how well you do all the steps. You've got about a 2 hour window at room temp before anything shifts due to heat (hence keeping it chilled prior to service). That time is even shorter when it's in the outdoors or even direct heat.

I use the Wilton size guide so a 6 and 8" cake should get you there. Layers depends on how thick you bake them and the size standard per Wilton is 2" thick. Even if you did 3 layers it wouldn't change the serving size, you just charge more for more cake. It's not until you're at 4 layers (8+ inches) that you would make a double barrel cake and then it affects servings. My recipes make 2 2" layers but I personally divide the batter into 3 pans because I like the aesthetics but it is still the same amount of cake.

No. The tubs like betty Crocker are too thin and gloppy, it will not hold its shape. If you *had* to I would add powdered sugar to thicken it, it would just make it very sweet. I have a video on how to make buttercream, that would be your best bet ❤

I have a humble question. If I freeze this cake to prevent the roses colapse, what happens when it's defrost naturally while shipping, or driving the cake in the morning until lunch time to be served.

I would make firmer rosettes to start with. Typically after a freeze the return to room temp needs to be gradual (freezer to fridge to room). With it being summer and going from freezer to transport there are just no guarantees. The condensation could be an issue. Typically it sitting out wouldnt be an issue though. Depending on the distance I would just keep it in the fridge instead of freezing it.

That one was already white, but if I need it decorated with fondant I lay it first then do the cake. Some people use craft paper then cover it with strips of plastic wrap to protect it, then remove the strips after decorating.

YES 100%. The crumbcoat needs to act as a solid layer before more frosting can go on. otherwise the 2nd layer of frosting won't work and you'll pull the crumbs out.

@@fkmt2026 You need it hard, temporarily, to decorate and transport it. Set it out 1 hour prior to cutting/eating it so that the entire thing comes to room temperature and softens.

You cam do shortening or butter (or a combo) with powdered sugar and flavor, you might not even need any liquid. Whip it is hard because it lacks stability.

stable whip cream needs unflavored gelatin added to it. It will depend on how much you're making, I would look up a recipe. But I have had great luck with just whipping cream and the gelatin, it is my favorite method. Next time I make something that needs it, I will totally film it.

whipping cream is also not vegan. It's dairy. I would suggest an oil based product, like margarine/shortening and powdered sugar for a frosting then whip it on high; or a dairy-free whipped product like Cool-whip or Whip 'n Ice (not vegan, but there may be similar products that are).

Wilton 1M we have some better up close shots in other videos and have them listed in the description of the video including every tool used. Once you do one rosette you just repeat until done, slightly overlapping them.

While the 2D is similar, we prefer 1M and used that for this cake. The 2D tends to ruffle more and the 1M gives a cleaner line.

Yes it is american buttercream. Salted butter, powdered sugar (double the powdered sugar weight to butter), flavor, and water only as needed.

How to avoid the Rossett falling off the cake after decorating?

Crumbcoat the cake. Chill. Then when piping make sure you apply some pressure so it sticks well to the cake. Don't make the frosting too soft either.

SuperNirmalraj I dont use grams, sorry! For the frosting it's twice the weight of powdered sugar as butter. So 100grams butter and 200 grams powdered sugar as an example.

1M. 2D in my opinion makes the edges ruffle more but it does work as well.

Yes, I've seen that comment a lot. Scroll through and see all of the solutions I've offered. This is not a tutorial, it's tips and tricks...like crumb coating, working on a chilled cake, etc. For a rosette make a lower case "e".
