That Eggplant dish looked so good. I had a recipe where you roast the eggplant with garlic cloves and a chili pepper shoved into slits and you roast the eggplant until it chars and you can peel off the skin (like you do bell peppers). And then you mash it it and mix it with sauteed onions and chopped tomatoes and add spices. I don't know if it's the same. It's pretty yummy. Hopefully you'll have Koyan back to show us how to make the Eggplant dish.

You can buy the bajri millet and grind it yourself. I pay about 5.00 for the bag. Find an Indian store, because to buy online there are theives

For anyone wondering about the eggplant dish, it's called 'ringan no odho' in Gujarati, if you can't find any recipes with that then use the Hindi translation called 'baingan ka bharta' :)

Thank you so much for inspiring me to cook such wonderful dishes. Just a FYI the Bajri flour tested that it is NOT gluten free. It possibility might be to shared equipment. Loved the rotlo recipe. I would’ve put at least 20 Indian dishes that are way too easier to cook, equally tasty and provides opportunities to eat veggies+grains and not need some technique other than sauté and cooking. So I’d really love your viewers to experience healthier Indian food
