Hello, In Hawai’i, we dry it for some time first.Then use it after for our cooking.But we extract it through regular oil.We use this to cook our local Hawaiian/Puerto Rican food.

I grew up using annatto and just about all my dishes that is to say what my mother used to cook at my grandmother before her and her grandmother before that it’s been used for many many many generations I had stopped using it because I kind of grew into another culture but I am back and I’m just loving it the health benefits are incredible and I tell people about it all the time and I appreciate your recipe here I’m going to follow that it may recall and mix it with all my food my salads I might even go back to painting my face with it as we are Brazilian and Sometimes my grandmother and older generations use it to paint your face is in ceremonies which I really appreciate

The water extraction method is going to be a lot better than using corn oil or soybean oil because these oils are toxic. They are "neutral oils" because they have been deodorized at the factory using petrochemicals. Water hasn't been through all that and it does seem to work well. Annatto is the best source of natural tocotrienol, which has abundant health benefits.

I believe you can use both. Just add to some oil in pan and warm on medium heat about 5 mins. When bubbles start to form around seeds take off heat and leave seeds in for 1 or 2 mins- it should turn a beautiful deep orange colour. (Do not burn or overcook or it will turn green and taste bitter.) Cool. Strain off seeds. Store in airtight container in fridge or leave out in cool, dry place for about 4-5 days.

Yes it can be stored in the fridge. I just eyeball the salt..depends how much you are making. The salt is just to preserve, so dont make overly salty if you are going to add to meala.
