I still remember when my grandfather had annatto plants behind the house. I used to watch my grandmother make the annato oil to make yellow rice, either with beans, gandules, chicken, etc. She cooked amazing! You do the achiote just like her. Yes!!! Keep up the good work.

I'm making annatto oil right now for under and on top of my pizza dough so it puffs up with some color. I like it with rice, coconut oil, olive oil, and broth too.

this is how what my mom used to cook all her foods back in the 70s in Brooklyn way before sazon in powder and oil she always used lard instead though not healthy it always made her food taste so good

Thank you so much for this recipe. My abuelita would always have achiote on the counter in the kitchen. Unfortunately, my mom (her daughter) didn’t have time to make this so I no longer ate it. Fast forward to me. You have made my smile a lot wider with this tutorial ! Finding the seeds will be a challenge as there is very limited Puerto Rican products available in western NC where we’ve moved to but originally from Philly suburbs. Thank you also for so many recipes that brought back so many memories. Extra happy you’ll ship pasteles all over the country. I’ll be placing an order real soon ! wow great recipe give or take a few seeds, saves a lot of money and time. I thought the seeds came from a flower but I found out Annatto is the seed or extract from the achiote tree, which is indigenous to Latin and South America. Annatto is used heavily in Central and South America as a dye, medicine, and as an ingredient in many foods. In 1800s they colored cheese with annatto, who knew.I plan to put this on BBQ and roasted corn on the cob on the grill:)

Thank your for sharing your knowledge through this video and you provide a great explanation. I noticed you used canola oil and several people made comments. People... use whatever oil YOU use. The result is basically the same. Use an oil that has a HIGH smoke point. You are basically boiling the oil. Keep an eye on it and dont walk away!! Peanut, canola, avacado and sunflower are a few oils that have a high smoke point, which makes them the best oils for cooking. If you are not sure google it. Buy whatever oil is available in your region. I make and use this seasoned oil for my rice and to season my pork and chicken. Best of luck to all. Be respectful with your comments.

I make this oil all the time but I use a good cooking extra virgin olive oil. I bottle it back in the olive oil glass and refrigerate. It so good in rice and I braise my guisado meat in this oil before adding my liquid. Adds a nutty peppery and earthy taste.

Before I saw your video I kind of intuitively guessed close to those temperature recommendations, and the 15 minute time frame. It really brought a wonderful color to some oatmeal with quinoa that I made. Some chefs say the achiote a.k.a. annato seeds are a good alternative to the similar colors you get from the more expensive saffron spice if you're on a budget. Thanks for posting.

Annato is just the Italian name for the natural of central america and the Caribbean Achiote seeds or Achiote plant. Italians put their own name to many things from other countries.

Make sure that when you strain the achiote that no achiote seeds go through. If you see one seed that has gone through stop and take it out. There is nothing worse that biting into one of these seeds while eating your food. Trust me I know from experience.

Saby Soto yes, I put mine in the fridge. I looked up how long the oil will last in the fridge and it'll last about 2yrs. Up to one year on the counter.

I found that if you burn or blacken the seeds you get a very undesirable flavor. It then makes all the following PR flavor combinations terrible. As a matter of precaution I bring it to his bubble up stage, then cut the heat off for approximately 20 minutes, then low simmer at 110 °F for 15 minutes, then off. I like to add cumin seeds at this "turn off" stage.

When I was a kid my grandmother used to leave hers on the stove, she would open the top of a bean can and bend it half way, then put pin holes in the other half. She would fill it about half way with seeds and fill it almost to the top with oil and just let it sit on the stove all the time so she would have it ready for use. Pretty sure it's still okay to do that haha this was in the 80's

Id avoid all the Teflon. I you truly want it healthy. Stainless steel for me only or iron cast to add iron to diet!

Hola Diana! You can but olive oil is not a neutral flavored oil. Canola oil is less expensive and is pretty neutral in flavor so the achiote will be the only flavor that you will taste. Hope that helps and thank you so much for watching!

Achiote oil (Annato name is italian, not the original achiote name) is used in many many dishes as a substitute for the super expensive Saffron oil.

I use achiote for natural coloring. Store bought sazon has artificial coloring. If your recipe calls for sazon, use one like ours that has only natural ingredients. Hope that helps!
