Thank you for this recipe and clear instructions. Can I use ground cumin instead if seeds? My husband is not a fan of the texture of whole spices, but I have to feed him anyway!! Lol

Thank you for this recipe! I had no idea how to use this vegetable! I was given seeds for this at a Vietnamese Spring Celebration. Now I can’t wait to grow these! Can’t get them in our grocery stores here.

adrianaloya There is another kind call long bottle gourd . Grow that kind is much better than just this type it is longer and grow faster and gives numerous of bottle guards I ordered seeds for myself from a friend of mine in Texas United States 🇺🇸

I’m sorry No offence brother but This is not cooked enough. Ask ANY authentic Pakistani u have literally just stir fried it. Where’s the fresh garlic? Tomatoes for the masala and the dry roasted coriander seeds? Garam masala is Mainly used for meat dishes not veg. A proper authentic Pakistani Sabzi has lots of Masala which is the base plenty of onions garlic and ginger is optional as generally in veg dishes ginger isn’t really used only in meat dishes. My recipe would be Firstly prep all ingredients.- Wash and peel the kaddu and top and Tail the stalk part and Cut into small Squares (smaller than video recipe) In a cold dry frying pan add equal cumin and coriander seeds separate batches and bring the pan to A low heat and keep Moving until u can smell the spices and texture is a little crispy and take off gas Immediately Otherwise will burn. Either blitz in a grinder for a Few seconds U Don't want a fine Powder as U want texture and nuttiness and store for a few months in airtight container . (If you want you can do half a batch coarsely blitzed and half a batch finely grounded to a powder and then they can be used in different recipes Accordingly. You will Notice such a different fresh aroma and taste out of this world and It can be used in many dishes even a Simple Humble Scrambled Egg will be elevated. If you don’t have grinder then do in pestle Mortar. FINELY chopped fresh coriander many cut coriander too big . Now to start the cooking Heat oil on Medium gas Now Add- 3 white onions sliced 5 cloves of garlic finally grated if want 1inch ginger finely grated 2 tablespoons of kalonji (black onion seeds) 1/2 tsp haldi (turmeric) 3/4 level tsp fine sea salt not the cheap saxa Type one and fry for About 4 mins till everything starts to wilt (the salt and haldi helps everything break down. Now add in 1.5 tablespoons of double concentrated tomato paste and 3 medium tomatoes cubed and cooked For further 3 mins. Add in 1/2 tsp curry powder 1/2 tsp chilli powder 1 tablespoon of of dry roasted blitzed cumin and cook for around 4 Mins medium heat so tomatoes have gone soft and then add your kaddu give a good mix and cover with lid and Cook on low gas for around 20 Minutes mixing in between. You will Notice the veg will let out water that’s Natural . Now add 1 tsp of Amchoor powder (mango powder) this gives it a lovely tangy sour flavour profile and This can easily be bought in local supermarkets or Asian dash and carry’s. Leave the lid off now and cook on high gas till Kaddu are soft and cooked and dry out the curry till all the water has evaporated and u will notice the curry will let the oil out . Add 1.5 tablespoons of the crushed coriander and a good Big handful of the finely chopped coriander a good chunk of butter and On a low gas Mix and cook for approx 3 mins . Curry done and enjoy best with chapatis . This recipe can be used exactly and veg kaddu replaced with other Asian veg like tinday (my family’s favourite) Aubergine Lady fingers Karailay Aloo Gobi Or even the humble aloo gajjar mattar (carrot potato pea curry) Some ppl mistakenly add the fresh coriander beforehand but that makes it bitter sometimes and u can’t taste the freshness Of it. Cooking is my passion I am self taught and Many Ask me to teach or Cook for them. I don’t mean to be disrespectful to the Man in video but I feel If you are going to cook Pakistani /Indian food do it right. Pls I do hope someone tries my recipe even the chef in video and give Feedback.
