With apples still in season and the holidays just around the corner, now is a great time to hone our pie-making skills. We start with how to make an amazing crust and follow up with making the filling from some Granny Smith apples picked from our own tree. We share several tips and principles that result in a perfectly baked and delicious home made pie from scratch!

What A Wonderful idea. Life skills are very important as well, and this channel’s content is EXCELLENT! AND COOKING/CANNING/GROWING FOOD are all pretty much a science lesson. I’ve been a big fan for a long long time. They are both highly educated, and give you the science behind everything they do. That’s how those other awful KZbinrs gave her the title “ That Woman With A Gadget” because of her ability to teach. Didn’t phase this smart woman, She embraced it! Find that video, your kids will love the science experiments about heat and botulism. I wish abundant blessing on you and your family!

❤loved this video, mostly because it is so similar to how I make my apple pies. I learned by trial and error and because my husband loved pie more than any other kind of dessert. Several failures along the way, but I just kept at it and this is how I’ve made them for the past 50 years. In addition to these reasons, I just get such a kick watching how you work and your sheer enthusiasm for teaching, it’s a good good thing.

Yummy...mmmmmmm Martha Stewart, eat your heart out 😊. You really filled that pie to the max 🤩🤩. A small scoop of vanilla ice cream might give the extra tart (Pam suggested extra sugar) a calming moment. OR A small slice of warmed sharp cheddar cheese atop and oh wow!

I think she is one of the coolest ladies out there. And then when I saw her use Siri, I was very impressed and inspired. I definitely need to improve on my technological skills😅. I appreciate all her efforts and teaching abilities. I love how she sees the details, and explains the details, and then demonstrates how to put it all together, and then create something very beautiful, especially because we are going to share what we learned from her with others, such as not over mixing the crust, and how to achieve this possibility. It's kind of like multiplying and replenishing the earth with Rose and Jim's skills.

My mom would always roll the crust cuttings out in to a round, sprinkle sugar and cinnamon on it, roll it up into a log, then place it in another pie pan around the edge in the shape of a crescent, cut it into even one-inch pieces, and bake. We called this Poor Man's Pie. Yummy.

The best way I’ve seen to cut butter into flour is with a rolling pin. On the counter. Makes flat flakes of butter.

My Mother & Grandmother didn't measure anything for their wonderful pie crust. Even my grandchildren can do the same thing. I did not get the pie crust gene🤥. So I really appreciate you teaching us your recipe and directions for pie crust.🥰

Your pie looks great! I love that you put in plenty of filling. I also learned how to flute the edge your way, by folding thectop crust over the bottom crust, sandwiching the bottom the way you did. It would prevent the juices from boiling out and into the oven. SMART!❤ Thank you!

Love the new intro. I didn’t comment about it on the previous class video, but I, too, was struck by the similarity of the intro to photos presented when one had passed. I enjoy all of your videos, with that being said, I have learned to roll my cold crust between two pieces of waxed paper so I don’t make a “mess” on the counter. Saves me one step of clean up. Your pie looks beautiful.

Thank you so much Pam. I adore making pies, and have been making them since I was 10 years old. My Mom took my boy /friend (we used to swim together at our summer lake home) and I into the kitchen and taught us how to make a cherry pie, crust and all. I have been making pies ever since. I agree with you that the food processor makes the fat too small and it gets lost and does not get into the layers to make the crust flakey. I will be making your pie crust from now on, as it is my favorite pie crust too. Mine only makes two crusts but has the same ingredients. Love that this makes 3 crusts. Thank you for the recipes. Pies are such fun to make and I would rather makes pies than make the rest of the Thanksgiving meal. Your cinnamon sticks are similar to what my Grandmother used to make me. She would just roll out the leftover dough, like you were rolling out your pie crust, and place it on a cookie sheet. Then she put cinnamon sugar on the top, and baked it. We broke it up into pieces. My Grandmother used to make something else with her crust…..Strawberry Shortcake. To me, the best strawberry shortcake is made with pie crust. We use small 5” or 6” plates (the older people used what they had) and cut the pie dough into circles. Next dock the crust and bake until golden brown. Cool. Next wash, stem and slice your strawberries and sweeten with sugar. Refrigerate until the crusts are cool. Whip real cream and place one crust on a plate, top with strawberries, juice of strawberries, then whipped cream. Add another crust, top with strawberries, juice of strawberries and then whipped cream. That is my favorite strawberry shortcake. Jim, you have a very hard job of taste-tasting! Ha. Thank you both for the video. ❤

LOVED this class. I’m 71 and you do almost exactly as I do canning and baking! The only thing I do different w my pies is that I brush the top crust lightly w milk and sprinkle a nice chunky sugar over the top of my fruit pies before baking! Otherwise almost identical!!!

My mother always used potato starch as the thickening. My siblings and I continue to use potato starch. It offers a lovely transparent thickening and hue to the filling. I so appreciate all of your videos!

Making this pie crust today for a homemade peach pie using the Fiori de Sicilia you turned me on to in another video. One trick I use when freezing food in a zip lock bag - put a straw partially into the bag on the far end, zip up the bag up to the straw, suck a lot of the air out and quickly remove straw and zip up that corner. I once made the mistake of using my vacuum sealer on bread and looked in horror as my beautiful loaf of bread was squished into a flat mass - lolll! Live and learn!

I put egg wash on my pies (not on the fluting) and sprinkle sugar on it before going in the oven. Gives it a sweet crispiness to the very top, and helps it to brown more even.

Mother crimped the edges of the crust with a fork pushed down, working around the pie. Then she would do one trim around the pie pan with a knife.

I grew up at the same time as you did Pam. Also make my pies like my mother. Very similar crust recipe. One thing she always did was brush a little water on the edge of the bottom crust edge before laying the top crust on to help seal that edge before fluting. We also brushed the top with cream and sprinkled with cinnamon sugar before baking. Pie looks delicious.

If anyone had any hesitation on making a apple pie from scratch, after watching your class...they will have complete confidence! Thank you for sharing your knowledge. I keep all the peels and cores at this stage, freeze them and when I get enough I make what I call junk jelly. It’s delicious and nothing is wasted.

I absolutely love your channel. Last week I watched the video of making biscuits, I made them that day and they were mouthwatering. My husband said it the best. Then last night I watched the Pie and pie crust…. I knew I wouldn’t be able to make EATABLE crust, never have. I DID IT!!!! I used pie filling I canned last year and crust I did this morning. Thank you for this video! I've never struggled with filling, but the crust gives me a hard time! I've never heard of adding an egg, or tried freezing the butter and crisco. The cost of ready made crust has gone through the roof, and I'd rather not pay so much for something packed with preservatives too! With your leftover apple mixture, you can cook it on the stove and use it to top french toast, pancakes, or oatmeal too! My picky toddler loved it, and started demanding apple berries, (because it's not sauce texture), for days after!

RichelleG you speak the truth! The pre-made crusts are so so much more expensive than they used to be. I used to be able to get them on sale for a couple of bucks, and could make the filling at home in my sleep. I saw pie crust at the store the other day for $8!!! For 2 crusts! Are they crazy!?

Fantastic video! Really loved it. I used to live in Germany and many of the young men and women lived in barracks. I was a young mother and decided to become proficient with pies. So we delivered pies to the people on my husband's shift for their birthdays. He was a shift commander. I made tons of them! In the beginning flipping the crust over (when it was doubled over in half to move) it would fall apart probably too dry. To I used saran wrap to flip it over and place carefully over the top of the pies. My crust recipe is very close to yours! I just didn't cool it between making the filling, which is such a good idea! Keep it cold! I don't eat pie, but my husband loves it! So I wanted to become good at it. I also make a little thicker pies for meat pies. He loves meat pies too. It is talent and art form! Practice makes perfect! Thank you again!

Pam: Chilling your marble rolling pen when you chill your pie dough will also help keep the fats in the crust intact. This in conjunction with your granite countertop will really aid in keeping those fats in a solid form for great crusts.
