H7sband and I just picked up a bottle to make this RUM OF and although I didn't have any coffee Bitters I added a couple drops of homemade Kahlula. Beautifully balanced craft cocktail, thank you for sharing! Even my 71yo mom kept mine after sampling it! ❤

Apparently Diplomatico is only called Botucal in Germany. I wondered why the bottles look identical and figured its the same rum under a different name. But I didn't know that the reason behind this is a german discount store, named Aldi. They had a brandy called Diplomat and sued for the name. That is so german, I love it.

Hello Kevin, great cocktail I had done it before with Appleton Jamaican Rum but I will try it again with the Diplomatico as soon as I get my hands on a bottle. I was surprised that you call for one bar spoon of sirup instead of a fixed measure like 1/4 oz or a tea spoon, my bar spoon and yours is not necessarily the same.

Hi, Denis! Thank you for putting this out. My full bar spoon is 5ml but I have to be more precise when writing down the recipes for a reason you mentioned. We don't all have the same volume of a bar spoon. It's a way I am used to making an Old Fashioned in a bar where I work since in this case I use all the syrup added into the spoon which is the tool later used for stirring the drink. In jigger, there may be left some rich syrup. Thank you for the advice. I will be more precise in future episodes.

I made this the other day and it was wonderful. I had Fee Brothers Aztec chocolate bitters, which was very interesting. Unfortunately I had no coffee bitters, but I am aching to look for a recipe to try, as I think a bit of coffee aroma would elevate this riff. I will probably experiment with chocolate bitters too. Interestingly enough, I have not found any coffee bitters on the market. Only cocoa bitters, which I am not sure would be very distinct from choco bitters. Any thoughts?

Personally I think that a good Rum has a Rum "funk" to it with notes of banana, caramel, cane sugar and age. Or pineapple if it's a Pinapple Rum like Plantation's variant. So I don't look for fruity chocolate notes in a Rum... though that does sound interesting.

Reserva Exclusiva has some added molasses honey so it's sweeter than other rums out there. But Planas, Mantuano or other premium bottles have less or even no sugar in them. I like it, but you have to be careful when balancing it with the sugar.

Rum snobs hate anything too sweet. I imagine they’re the type of people who add zero seasoning to food. Diplomatico is delicious. And that’s all that really matters.

@@jayhag5481 from the stuff that I've heard some people say I'm under the impression that some people dislike sweetness and dislike flavor and they like lack of flavor or unpleasant flavors like bitterness or plain tabaco. I will never understand what's wrong with them but this makes no sense. Unless it's like a masochism thing where they love to suffer. Either way it appears that they're f'd in the head. Their favorite meal may be water with parchment paper.

Diplomatico is usually widely approachable. I make my own Coffee and Chocolate bitters. You can get chocolate bitters from Angostura or Fee Brothers. If it's hard for you to get Coffee bitters, you can infuse Chocolate Angostura with coffee and use that, or you can make coffee/demerara syrup and use that in a cocktail. Cheers!

Instead of using the name of a cocktail that traditionally has a different/specific spirit, why can’t the we just come up with a different name for the cocktail? I don’t hear anyone replacing tequila with bourbon in a margarita and calling it a bourbon margarita. Just like a martini…the base spirit is gin…replacing it with vodka, makes a fundamentally different cocktail.
