I really like the peppermint rum Chatta that you can only get at Christmas. Would I just add peppermint oil maybe? And does it need to be stored in the refrigerator? And what is the shelflife? I really enjoy listening to you and trying your recipes. Thanks so much.

Yes, I would add 1/2 tsp of peppermint extract. It’s pretty potent stuff, so start small, and then if it’s not enough maybe bump up to a whole tsp, and so on. I think you might also want to add a touch more sugar to balance out the other flavors if you’re going to add peppermint. So maybe 3/4 a cup, rather than half. Let me know how it goes!!

I am a bit surprised the brown rice wasn't that much different... Great experiment! Love your sweatshirt! You are braver than I am... I wear it in the kitchen and I know I'm going to fuck up, so I take it off constantly to not ruin it... Also, I'm not really a podcast person either... For those looking for a lactose free dairy version. Organic valley half and half lactose free, green valley butter lactose free one stick (two if you want it really creamy), reduce by a quarter in a pot, be sure to stir often, and you have your whipping cream. Looks like a great recipe will have to try it! I modified your Irish cream recipe to be lactose free and added a few things to it. Everyone loves it. Bet this will be another hit.

Yes, store this in the fridge. Good for at least several weeks, but just smell it first. If it smells wrong, it is wrong. If it smells fine, you’re good :)

So you don't specify how long you need to leave the jar of water, sugar, rice and cinnamon sitting before blending it. I am assuming overnight since your other jars are from "yesterday" but is there a minimum time they should sit? Maximum?

What cinnamon did you end up using? I like Ceylon, it has a subtle lemon flavor. I heard that nutmeg is added to Rum chata.

I read that chufa nuts should be used, but they can be replaced with a mixture of almonds and Brazil nuts with water. Vanilla is not Bourbon, but Tahiti. I love Ceylon cinnamon. It is healthier and smells like flowers and fruits, but cassia has a warm smell of childhood and baking.

You can use whatever spirit you want. It's your drink, make it how you think you might like it. Make it your own. Use rum, gin, vodka, bourbon, whiskey.....experiment. Search for other recipies, you can't imagine how many drinks you cab make at home.

Horchata is from North Africa and is made with barley. The Arabs brought it to Spain, where they developed their own version, made with chufa (tiger nuts). The Spaniards brought it to Mexico, where they developed their own version, made with rice.

@@smokinwoodzHorchata isn’t an ingredient, it’s the name of the beverage. The problem is that op is used to the version of horchata made in their country and is apparently bothered by the existence of other variations, even though their country’s version isn’t the original either.
