I'm part of the home distilling community. With the part of the run that doesn't quite make the cut of the run of my plain tequila I either turn it into vanilla tequila or kahlua. My recipe is 95% abv home made tequila Equal parts s'mores flavored coffee (usually 12 cups) Between 1-2 cups sugar Half whole vanilla bean per bottle

Thanks. I use fruit simple syrups to flavor my kumbuchas. I let the first ferment go to dry tasting and very active carbination. I add monk fruit extract and fruit simple syrups to the bottles with 1/2 tsp sugar per 12oz.😊

One of the things I'm most grateful for learning in a career spending a few years in restaurants, was how to braise beef from an honest to god French Chef. Short Ribs, Chuck Roasts, and Ox Tails are so flavorful. I do a similar 'pot roast' with a whole chuck roast. It's great for a gathering or party because you can cook it the day before and just heat it up and keep it in a warm oven. It's always a crowd pleaser.

Yes, store this in the fridge. Good for at least several weeks, but just smell it first. If it smells wrong, it is wrong. If it smells fine, you’re good :)

Not sure I understand do you brew perked coffee or use instant coffee like is it hot then cooled? Sorry everyone says pour instant coffee in the pot they don’t add hot water to the coffee I’ve never made this and like your recipe the best just unsure ???

No worries, totally valid question! In this case, you want a cup of coffee that has been cooled. It’s totally ok to use a cup of instant coffee where you’ve dissolved instant coffee granules into a cup of hot water or you can use a cup of brewed or drip coffee.

I enjoy cooking but not following recipes.. Julia Child's Beef Bourguignon was one of the first recipes I made for my wife after we were married. She probably just watched Julie and Julia, bought me the book and I followed it exactly... It wasn't that good and my wife was never impressed with me again, which sucks for her, because we were already contractually obligated with the whole marriage thing... A decade later, this year, I made Beef Bourguignon again and it was so much better... Just made stew this weekend for my longest-tenured friends... they think I just put it in a slow cooker for the whole day, but I made it the day before and spent so much time, because it is a labor of love for these people... Bourbon 100% next time, will give this a shot if we ever get snow again...

What cinnamon did you end up using? I like Ceylon, it has a subtle lemon flavor. I heard that nutmeg is added to Rum chata.

I read that chufa nuts should be used, but they can be replaced with a mixture of almonds and Brazil nuts with water. Vanilla is not Bourbon, but Tahiti. I love Ceylon cinnamon. It is healthier and smells like flowers and fruits, but cassia has a warm smell of childhood and baking.

Both this recipe and the chocolate one could add one clove with the cool down of the syrup. Cloves are really strong but this would encase the deep chocolate syrup significantly I think. Something to think about

If you enjoy the flavor of cloves, absolutely! Personally, I don’t think they’re going to enhance the chocolate flavor as much as introduce a spice flavor. Cloves are extremely distinct and stand alone in flavor. But that’s not a bad thing!! Let me know if you try it!

You have an amazing pallet and I consider you a master chef in beverages. Made your recipe with the Fireball and it exceeds the real thing. Used gifted 50% mountain brandy for the alcohol base, so the liquor was a bit higher in proof (+/- 25%) , and yes, it is the bomb! This goes in my recipe book.

I’m going to try making this low carb. Evaporated milk instead of condensed milk, brown sugar swerve, and slightly watered down heavy cream(from shelf-stable powder). I’ll compare carbs between whiskey and NA whiskey. Another commenter suggested this recipe is as costly as Bailey’s, or more so. I’m reading responses to a comment about making this NA, such as hot sauce to replace the whisky’s kick.

Cassia cinnamon is a different variety of tree to what we know as Saigon cinnamon. Former is Chinese, while the later is central Vietnam. They are close, but are distinct. There's 10 cinnamon varieties, and we only care about 4 of these really.
