Ingredients:
Filling:
14 oz frozen shredded coconut, thawed
1 cup sugar
3/4 cup sunflower seeds
1/2 cup roasted sesame seeds
3 Tbsp cooked glutinous rice flour
3 Tbsp water
1/4 tsp pomelo essence
Dough:
1 cup all-purpose flour
1/4 cup cake flour
1/3 cup syrup
2 Tbsp peanut oil
1 egg yolk
1/4 cup all-purpose flour for rolling the dough
Egg Wash:
1 egg yolk
1 tsp water
1/2 tsp sesame oil
The measurements for the molds are as follows:
Stamp Molds: 12 cakes
Each cake: 75 grams or 2 2/3 oz
Dough: 25 grams or 7/8 oz
Filling: 50 grams or 1 3/4 oz
Egg Molds:
Each cake: 30 grams 1 1/8 oz
Dough: 10 grams or 1/3 oz
Filling: 20 grams or 3/4 oz

Khuôn stamp : 12 bánh
1 bánh = 75 grams
Bột = 25 grams
Nhân = 50 grams
Khuôn trứng
1 bánh = 30 grams

peanut oil.....is there a possible replacement? Also it say syrup?...like pancake syrup..maple syrup okay?

Love, love, LOVE this recipe, Trang! The mooncakes came out so beautiful and I love the filling you used. Coconut makes everything taste yummy! I would probably replace the sunflower seeds with peanuts or psitachios or walnuts, though. :) The other shapes you made at the end are super cute for kids. Thanks for such an awesome recipe!

Hi chi Trang I just went to pacific market here in Portland and was told that FDA did not allow any of the roasted flour from VN in to the states. which is the reason the stores for now does not have the pre-packaged bags.

Thank you so much for posting this video. I received a Kivvo Moon Cake Mold in the mail today, but there are no instructions included. I now have some idea of how it is meant to be used, I just need to apply it to a 600 gram mold.

They were amazing Thank you. My girlfriend and her family loved them. I didn't have a scale, so i rolled the doe in one big long tube, and folded it and cut evenly into 6 pieces to get my 12 portions of doe proper. ;) And I guess the size of filling and the early ones were a bit big, the last ones were perfect, but couldn't make 12 cause I messed up the filling at the start. Next time I'll have a scale. :) I surprised my Chinese girlfriend with these on the Mid-Autumn Festival. I was planning to make these for months, and bought a 4 set mold set, 3 were Chinese writing, and one was a heart...

Em đã làm bánh thành công theo công thức của chị , nhưng em sử dung hoàn toàn bột APF, vì khong có cake flour, và nhân đậu xanh. Bột bánh mềm mặc dù trong công thức không có nước tro tàu. Em cám ơn chị đã hướng dẫn.

Hi. Why " cooked" glutinous rice? Thx. Also, I want to learn how to make bean sprouts. I follow instructions from Internet but don't turn our right. My mom says that it's bad luck for married women to make them. "Giá" . LOL

Ngoài ra khi em nhồi bột nhiều quá cũng làm bánh cứng, không nên nướng bánh lâu qúa, vì bánh TT nhân đã chín rồi không cần nướng lâu. Bánh nướng xong để qua ngày hôm sau cho bánh tươm dầu và sẽ mềm dẻo. Chúc em thành công!

Lol...you can find pomelo essence at the Asian grocery store in the baking section. For fresh fruit, use 2 Tbsp juice. Good luck!

Hi Mary, I use the Safeway brand breakfast syrup in this recipe. They have 2 varieties: Old-Fashioned and Original Syrup. Both work well for this recipe. (Depending on where you live Safeway stores are called Von's.) Hope that helps!

I've found honey makes the dough really sticky. Use the breakfast (pancake) syrup, Lyle's golden syrup or agave nectar. Good Luck!

Hello, I was wondering if the smell of the syrup was overpowering or distinct after baking? I have the same syrup from Von's but I'm not a fan of the smell. I've read that honey can be used as a substitute for golden syrup but I have not seen anyone use it.

+Jade Huynh Hi Jade, sorry to hear you didn't like the syrup. Typically, the aroma of the cakes is from the sesame oil that is used in the egg wash. Did you use an egg wash? For the syrup, did you use the original or the old-fashioned with molasses and brown sugar?

Hi Trang, I bought the syrup at Von's/Safeway stores. It's the Safeway brand of breakfast syrup labelled "Original Syrup". The "Old-Fashioned Syrup" also works well. Good Luck!

I think you can definitely make a peanut butter filling but may need to mix it with something else to make it easier to roll.

+Zindy luu Hi Zindy, roasted glutinous rice flour is very unique. There are no substitutes but you can skip it if you can't find it. (It helps the filling stick together.) Just roll into balls while the filling is hot. Good Luck!

Hello..thank you for sharing! I'd like to try but I have several "problems" I live in a small town in France so Asian products are not handy! For the coconut, can I use the dessicated one - soak in water (maybe)? For the syrup, is that pancake syrup? Can I replace it with just some granulated sugar and some water or just sugar cane syrup? (The French don't eat pancakes. They eat crêpes with nutella or powdered sugar and not maple syrup) And, what is cooked glutinous rice flour? Is that the flour that has been heated in the oven or frying pan? Thank you in advance for your reply! Warm hello from France!

Hi Jacqueline, your small French town sounds just lovely. For the coconut, yes, you can use the dessicated variety and rehydrate with a bit of water. The syrup is pancake syrup. Feel free to substitute it with any available syrup. Someone mentioned they tried honey and it worked well. Sugar cane syrup would work as well. "Cooked glutinous rice flour" is glutinous rice flour which is roasted and is fully cooked. It has a wonderful roasted rice aroma and is a binder for the filling. As a substitute for this, please replace with 1 Tbsp corn starch or all-purpose flour. I love that you're willing to adapt a recipe to what's locally available! I'll try it when I get to order the molds (having a hard time choosing the designs :)) The glutinous rice I have doesn't say "cooked" on the package and the ingredients which are glutinous rice and water don't say it being cooked either. Does that mean I need to find one which says so on the package? Can I assume it's cooked or maybe I can heat it in the oven or frying pan? Or how about tapioca flour? Will let you know once I make them. Cheers...

Cooked glutinous rice flour is difficult to find unless you have a well-stocked, larger Asian grocer. If the package isn't labelled "cooked" or "roast" or "fried", it's the raw glutinous rice flour. I've tried cooking raw glutinous race flour at home (pan-fry and steaming) and it's not right. The flour still tastes very raw and shouldn't be used. I hope that helps. Cheers!

According to Wikipedia, Pomelo belongs to the Citrus family, and its scientific name is Citrus Maximus because it looks like a huge grapefruit. Wiki states that Citrus Maximus tastes like a mild grapefruit. So maybe you can use a grapefruit instead. I'm not crazy about grapefruit; but I love oranges, lemons, and limes. So, if I were going to make a coconut mooncake; I'd use the juice of an orange, lemon, or lime instead. :)

I believe this is either tapioca starch or arrowroot starch. Unfortunately, these are raw starches and cannot be substituted for cooked glutinous rice flour.

Jaclyn Nguyen you can make your own cooked glutinous rice flour . Put reg glutinous rice flour . 100 grams or 200 grams in a baking pan . Heat oven 300 degrees F bake . 10 min stir it even . Repeat 3 time will be ok . Will see the colour change .
