you make us French Canadians from Québec proud with this one! Our Grandmothers made this, and maple fudge, and another type of sweet called "Sucre à la crème" which sadly is impossible to make a vegan version of. No one makes maple butter anymore because it's so difficult to make. I'm 41 and most of my generation wasn't taught how to make this stuff. Bravo! for showing the world our 400 year old tradition!

My grandmere made "Sucre à la crème" for us when we were kids. It was sooooo good on white bread. But sadly, no one in the family can replicate it so that it taste's like hers, even though as adults she would show us how she made it. We even used the same dish that she used! I should start trying again.

It's confusing for sure! A lot of things can be buttered, like fruit butters (apple butter, fig butter, etc.) and nut butters, where they don't actually add any real butter. It's most commonly cooked using the nut or fruit itself I think, without pectin (found in jams), and are called butters because of its spreadability (like, how creamy and easy it spreads).
@victrola20076 жыл бұрын
q u i e t l y Yes! It's super popular in the US. Best ones come from roadside or country stores. I remember I took a friend out to Louray caverns for a day trip and all he wanted as souveniers were apple, pear and fig butters from the souvenier shop.

Man, I can smell the warm maple syrup just watching the video! I'm from Québec, where 75% of the world maple syrup is made, and every year in the spring we go to the "sugar shack" (cabane à sucre), that are basically in a maple tree forest, to eat traditional food drowned in maple syrup! The best butter in my opinion is the one slightly creamier (where you said "you can stop at this point". It's great just by the spoonfull! You could also stop at 4min and you get maple taffee (tire d'érable), which we actually pour on snow and eat like a lollipop. Thanks for that video!! I hope you still ate the failure :D xx

@elyzevaelathal4 жыл бұрын
I know I'm years late, but a quick tip: when using a thermometer, try not to let it touch the bottom of the pot/pan, otherwise it records the temperature of the pot and not the ingredients inside it. Anyway, love all of your videos, and the lifestyle you live looks amazing. My dream is to be as happy, peaceful and content as you are!

I have trypophobia and I accidentally watched something that triggered me into having a panic attack just a few minutes before clicking on this video. The trigger was caused by my ignorance alone,, but listening to your video really calmed me down. (People may not think trypophobia is a real phobia and you can debate this all you want but sometimes I get so panicky when I see images that trigger me I want to throw up or literally have a breakdown. It's that bad. So listening to your video really helps. I've never really talked to anyone about my phobia but I think I might with my therapist eventually (since my phobia is something that rarely comes up,) - but thinking about my fear makes my skin crawl. Though, I'm able to type about it with your video in the background. It's really calming.) Thank you! - Andie

with the failed ones all you need to do is rehydrate the crystals and turn it back into syrup. Then..., try again. boil water and slowly add the crystals to the water not the other way around or you will scorch the syrup. once you get the hang of making that maple butter, it's like riding a bike. easy and you wont forget.
