Ingredients:
450g rice
280g water (about 60~65% of water relative to the dry rice)
30g oil
20g sweetener (optional)
5g dry yeast
4g salt
Instructions:
1. soak rice for at least a few hours (longer the better, up to 12 hours)
2. put all the ingredients in a blender container and blend at high power until it becomes completely smooth
3. adjust the dough's water content by adding water little by little
4. allow it to ferment until it doubles in volume, then spray water onto the surface
5. bake at 180C/356F for 30 minutes

水 280g(乾燥状態のお米の60~65%くらいが目安です)
オイル 30g
甘味料 20g(動画内では加えていませんが、入れると発酵が活発になります)
ドライイースト 5g
塩 4g
「作り方」
1、お米を数時間浸水させる(可能なら12時間程度)
2、全ての材料をブレンダーで完全に滑らかになるまで攪拌します。
3、水を少しずつ加えながら生地の水分量を調整します。
4、1.5倍くらいになるまで発酵させます。
5、表面に霧吹きで水を吹きかけ、180℃で30分焼きます。

The other rice bread recipes I’ve seen on KZbin involve putting some kind of a lid over the bread as it bakes for at least part of the baking time. This video is encouraging because it looks like we can get a nice top crust, even without bothering with any kind of lid.

This is truly excellent bread. I tried it after a short time cooling on the counter and it fell apart. I refrigerated a whole loaf and just tried it again. It’s excellent! I’m making grilled cheese for the first time in Years!

In India for this a natural fermenting lentil konan as "Black gram" (split/whole and skinned) is used instead of yeast. Ratio is 4 or 3 portions of rice : 1 black gram split or whole, skinned. The process is exactly the same as you have shown. i.e soaking and grinding with water, them keeping it overnight to ferment and rise, then baking or steaming.

@@angel10691 first attempt I allowed to rise for too long, got back to a deflated mess and poured it out. Second attempt rose alright, maybe could have used more time, but the texture was awfully gummy and grainy as I don't think the rice was blended enough. I'm going for a third attempt, but this time I am going to soak rice flour for a bit and see if I can swing it that way. Not sure if my blender is powerful enough or what. I'll let ya know😬 edited to say I also used a standard cast iron loaf pan, lined with parchment, as I don't have the type of pan pictured, but will work I'm ordering one as I suspect that may have something to do with the color and texture

J ai essayé avec un riz demi complet thaï et ça fonctionne. C est le principe de la pâte à idli avec en plus de la levure. Merci beaucoup pour cette recette simple qui je vois nous fait poser beaucoup de questions.

I am so glad you are back on KZbin, congrats on your new house. Then a question, the first step after measuring the rice, the rice goes into some device. What is this, and what does it with the rice? It's basically a small mill... it separates the bran from the grain of rice.

Is the writen recipe correct when I weigh out 450g of rice it's practically 2 cups and 280g of water barely cover it.

If you read the description you'll see he intends for you to add more water slowly, you start like that then as it's blending you keep adding water until you get it as in the video

I read in another comment it de husks the rice. I think if you start with plain white rice you can skip that step

@@md-tu3bj thank you. I found on KZbin a video for making fermented dosa from red lentil and rice. Everything else seems to require baking soda or baking powder, which I am trying to avoid.

I've had great success with the red lentil rolls. They are so easy and pretty great for gluten free sandwiches etc. would love to see peaceful cuisine do that as a video! Didn't have much success with this rice bread but I am going to try again

Fun Fact (Please correct me if I am wrong) While america was trying to reconstruct japan after they dropped the sun on Nagasaki and Hiroshima. They having a huge push for them to grow wheat, and thus to make bread. However the japanese, being stubborn as they are historically known to do, told them “bro, we don’t need that. We got rice n stuff!” Which by the way, this mentality led to the invention of instant noodles, because the guy who invented them just wanted to have a way for easy to store, easy to make, and very accessible noodle soup. And after a few years of banging his head against the wall, he said “fuck it”, and threw the sums of bitches in tempora oil, flash frying the noodles. Again, PLEASE CORRECT ME IF IM WRONG, I JUST WANTED TO SHARE THIS BECAUSE THIS WAS VAGUELY RELATED.
