Wow, I like you use fox to Char the rice noodles, but if I forgot the bean sprouts I will use some to garnish at the end. However it looks good .

I like this version. The Filipinos call this pancit bihon. They make there’s slightly on the wet side which isn’t bad ... but I prefer it more on the dry side. Your instructions are easy to follow. I’ll make this. Thank you.

This is a great recipe and presentation. I’ve watched many for this dish. I’m looking at woks and it seems a stir fry pan gives more surface than a wok. The only thing is carbon steel is a pain to season. I see yours is wobbly on the stove. Thanks.

You can get a stainless ring that is placed between the burner and the wok. Stir frying in a pan can be messy from spillage.

A few suggestion, when marinating the shrimp add the oil last, if you add it first it tends to block the other ingredients from working. I also think you can use much less oil when cooking, use a higher temp and about 1/2 the amount of oil, this will produce a much lighter and more distinctly flavored dish. I have had this dish many times with a little coconut added.

Bean sprout at the end actually bring the crunchy texture to the dish. Great presentation. Can you please cook the jumbo prawn in the clay pot. Aka Tom Kho tau. This noddle style would go well with that jumbo prawn.

I love Singapore Rice Noodles, but I love them spicy hot. I've tried making it with madras curry powder, but it's not spicy hot. Anyone know what the fast food places add to it to make it spicy hot?

Suggestion: Cook the curry powder in oil to infuse the taste otherwise you may burn the powder., I add curry and turmeric and oil in the noodles before stir frying into dish. It reduces sticking and reduces the need for continual oiling and add more color and taste when pre-seasoned. LOVE these noodles.
