The Saffron Ice Cream is a delicious, fragrant, and creamy Iranian (Persian) dessert. In addition to the ingredients listed below, the traditional version of the Persian saffron ice cream, which is sometimes called "Bastani Sonnati Zaferani" (بستنی سنتی زعفرانی) also contains eggs, vanilla extract, and salep or sahlab (ثعلب). This implementation of the saffron ice cream is simple to make and quite enjoyable during hot summer days.
Ingredients
1-1/4 cups Whole Milk (شیر), Regular or Lactose Free
3 cups Heavy Cream (خامه سنگین)
1-1/8 cups Granulated White Sugar (شکر)
1/4 cup Rose Water (گلاب)
1/4 tsp Saffron, ground (پودر زعفران) + 2 tbsp warm water
1/2 tsp Cardamom, ground (هل کوبید) + 2 tbsp warm water
1 pinch Saffron threads (زعفران)
1/3 cup Heavy Cream, poured into a 10-inch plate
(to make hard frozen cream)
Optional
- Ground Pistachios (پسته آسیاب شده)
- Slivered Pistachios (خلال پسته)
- Blanched Slivered Almonds (خلال بادام)
- Barberry Syrup (شیره زرشک)
- Ice Cream Wafers (نان بستنی)
Equipment
- Electric Hand Mixer
- Ice Cream Maker (The Cuisinart ICE-30BC was used for making the ice cream)
