The thing is Eddie was a terrible parent, most of the time. She does defend Saffy from a lecher when Saffy is very young and its obvious that without Patsy influencing her she would be a much better parent. But that's where the humour comes from. We aren't supposed to like Eddie or Patsy. Saffy sees them through the eyes of the audience, even her gran occasionally does that. Most humour comes from taking reality and then distorting it, usually by various extremes of exaggeration. We all parent wrongly on occasion. We all friend wrongly now and then etc. Abfab takes those occasional mistakes people make and exaggerates them and has people commit them who lack the ability to either recognise they are at fault or care to do anything about it when they do. Hey presto, humour! But humour with pathos. Its a difficult balance. Tue show rarely got it wrong.
