Your Netflix series opened up whole new worlds for me. I have been cooking since before I started school. All of this time, I never actually understood what I was doing, I just did it. Now, I actually understand what I am doing and how to do it even better. Watching your series was like taking music theory classes. Once I learned the circle of fifths, I could sit down to any piano or keyboard and play any scale in any key. I could just play scales and learn those keys. Now, the same is true for me with cooking. I know understand the importance of SALT, FAT, ACID & HEAT. I understand how to create flavor by using combinations of those very basic foundational building blocks. THANK YOU! My stomach thanks you, my family thanks you, my friends thank you and hopefully, one day, the world will thank you.

Did you rinse off the brine before cooking the bird? Looks like a lot of salt to just keep on the chicken. Normally, a brine is rinsed off before roasting. (I don't own her cookbook.)

This is one of my favorite bases for doing a slow roasted chicken. What I do differently is spatchcock the marinaded chicken, lay it on a bed of lemon slices, green onions, halved garlic head, and sprigs of rosemary, sage and thyme to help perfume it with aromatics. Then I slow roast at 240 for almost a couple hours and then turn the oven all the way up to deeply brown the skin for the last 20 minutes and let it rest before carving for service.

Luckily there is a cookbook of the same name that can let you prep ahead of time. This is an easy one, salt the chicken and the buttermilk, after 30 minutes pour the buttermilk over the chicken and let marinate overnight, cook at 425 until done.

for a whole chicken it really isn't that much salt. it will just permeate and give flavor without being "salty." also it looks like she is using a type of kosher salt which is a lot less salty than regular table salt.

chicken is actually not supposed to be cleaned. you don't actually "clean" the chicken when you scrub it with water or citrus, you just end up spreading germs all over the place.

You would think right?!! I attended a potluck where my friend brought roasted chicken. After I had some, it was really delicious with sort of a mild flavoring. I couldn't identify what made it so tasty (no particular spice notes I could put my finger on) so I asked her what the chicken was and she sent me here! Being a West African who was raised on strong amazing spicies, the simplicity yet tastiness of this blew my mind.

with a really good chicken you dont need spice. problem is nowadays mass production of meat leaves the meat tasting like nothing, thus, bland. i will try this with a nice corn chicken

The sodium she uses is Diamond Kosher salt which is less saltier than Morton's. Had you watched the series, she explains why she uses Diamond over Morton's.
