Cakeshare, my salted caramel and chocolate tart recipe! ASMR
Experiment and relax at the same time listening to the noises generated by the kitchen and the preparations themselves, try to replicate my desserts by turning off any source of noise and appreciating the moment!

HAZELNUT NAMELAKA:
50g milk
20g hazelnut paste
3g honey
2g gelatin in sheets
80g white chocolate
110g cream
PIE:
75g butter
25g hazelnut flour
40g sugar
1g salt
30g egg
115g "00" flour
10g cocoa powder
SALTED CARAMEL:
100g sugar
30g water
3g salt
25g butter
60g cream
GANACHE CHOCOLATE:
135g dark chocolate 70%
150g cream
DOSES FOR: 6 people
TART DIAMETER: 16 cm
SILICONE MOLD DIAMETER: 14 cm
N.B: this cake does not present major difficulties, I know that I always repeat myself but the rest times are very important. For the namelaka I preferred to do the double dose because reducing the quantities, the preparation would have created problems for me. The tart this time I chose not to prick it (with a fork) I wanted to understand if the consistency changed, I was pleasantly surprised because when cut it remained much softer. Salted caramel is really simple but be careful when pouring the cream, make sure it is hot, use a large enough saucepan and stir vigorously until reduced. When you pour the ganache, wait for it to cool down for a moment so as not to melt the caramel underneath.
