Salted Caramel Butter Bars | Small Batch | Feeds 2- 4 people

A buttery shortbread crust topped with salted caramel and then more shortbread crust mixture on top. They are insane!!
Ingredients:
Shortbread Crust:
1/2 cup butter, salted
3 Tbsp granulated sugar
6 Tbsp powdered sugar
1 tsp vanilla
1 cup flour
Caramel Layer
1/2 cup of caramel bits
2 Tbsp whipping cream or milk
1/8 tsp vanilla.
Directions:
Combine all shortbread crust ingredients in a bowl. Mix with an electric hand mixer until all the flour is incorporated and it is crumbly. Add a little water, a teaspoon at a time if needed to help bring the dough together. You still want the dough to be able to crumble so don't add too much!
Press into the bottom of a lined 9 x 5 inch bread pan.
Bake at 325 degrees F. for 15- minutes or until edges just begin to turn golden brown.
In a microwave safe bowl combine caramel bits, milk and vanilla extract and microwave until caramel bits have melted and are smooth.
Pour caramel over hot baked crust.
Crumble remaining shortbread crust mixture and add to top of caramel.
Bake for another 23-24 minutes or until caramel is bubbly and hot and topping is lightly golden brown. Enjoy!

Tip: for cream/milk is push the card board away from the cap, so you grab the cap to open.

I can only find caramel soft chews or caramel sauce. I checked 2 stores. I need to make these! They do have butterscotch chips, but I don't think it would be the same.

I’ve seen werthers caramels (wrapped soft caramels) used in recipes where they melt them. I’m in Australia and we don’t have caramel bits, so that’s what I’d be using.

I don't think Kraft Caramel Bits are available in Canada, but the actual Kraft individually wrapped Caramels ( each Square Caramel is individually wrapped ) Pkgs Are available in Canada ....
