Sambal Tumis Kerang / Spicy Cockles Recipe, slightly sweet, spicy and its in dark colour too!
Ingredients
cockles
cooking oil
onion
ginger
garlic
chili paste
anchovies powder, optional
sugar / gula melaka as per your preference
tamarind paste, grape size
tomato sauce
salt
Method
Heat pan with cooking oil. Sauté onion for 1-2mins. Add ginger garlic paste and saute again till no raw smell. Add chili paste and cook till oil separate. Stir in between. Add water, anchovies powder and sugar. Let it be thick again. Add tomato sauce and tamarind paste. Sauté again. When the sambal slightly dry add cockles, salt, sugar and white pepper. Cook till cockles soft. Add onion slices and cook for 2-3mins. Off the flame and enjoy
