1. Sambosa (samosa, sambousek) vegetable and cheese stuffed recipe - سمبوسك مع الخضرا و الجبنه
A samousa (samosa) is a fried or baked pastry (snack) with a savory filling, such as spiced potatoes, onions, peas, cheese, beef and other meats, or lentils. It may take different forms, including triangular, cone, or half-moon shapes, depending on the region.
in this video shown 2 version of cheese stuffed samosa (sambousa) and sambousa (samosa) with vegetables.
Vegetable stuffing:
3 medium potatoes
1 medium carrot
1/2 cup of green peas
1 medium onion
2 cloves of garlic
3 tbsp. vegetable oil
1 teaspoon cumin seeds
salt, black pepper to taste
1/2 curcuma (turmeric)
1 teaspoon garam masala
1 teaspoon coriander
IF you want a spicy version be free to add a chili powder 1/2 teaspoon
Cheese stuffing:
1. mozzarella 100 g
feta 100 g
fresh mint 2 tbsp.
2. mozzarella 100 g
cheese nabulsi 150 g

To prepare the vegetable stuffing sambusak, peel potato and cun into small cubes, boil without salt or spices for 15 minutes, drain the potatoes and set aside. in the large frying pan start to warm the cumin seeds on oil and than add the vegetables, add the rest of spices and simmer for 4-5 minutes till the spices well combined.

Fold the sambosa like it shown in a video and close the edges by the clay ( 1 tbsp. of flour + water).
If you want to freeze sambosa for later, store them in a zip bag and freeze for 1-2 months. You can fry samosa at once in a medium heat for 4-5 minutes till golden brown color.
Sambosa is very popular mezze snack specially during month of Ramadan.

Beef Sambousek is a crispy meat pie, typically served as a mezze or appetizer. These delicious pies are loaded with spiced ground beef, onions, pine nuts and fried to golden perfection.

For the Sambousek dough: ( the recipe will serve 35-40 sambousek)
1 1/2 cups all purpose flour (280 g)
3 tbsp. (50 g ) corn starch (the corn starch will make sambousek more crispy)
1/2 teaspoon Salt
1/2 cup of water (140 ml)
4 tbsp. (60 ml) vegetable oil

Meat stuffing sambousek :
250 g. Lamb meat ( you can substitute with beef )
120 g onion ( one medium onion )
2 cloves garlic
salt, black pepper, 7 spice, cinnamon
50 g pine nuts ( roasted)

Cheese stuffing sambousek :
70 g akawi cheese
70 g mozzarella cheese
2 tbsp. mint
or you can use most of white kind of cheeses with less moist as possible

1. In a bowl combine together all purpose flour + corn starch + salt and mix together. Add vegetable oil and run with your hands till the dough will get a crumbly texture.
2. Add water and knead the dough for 1-2 minutes, the dough for sambousek will not be sticky. once it comes together , let the dough rest for 30 minutes up to one hour.
3. Meanwhile prepare the stuffing.
4. Roll the dough 2-3 mm thickness and cut into rounds. Fill with the stuffing and seal the edges the way it shown on the video. ( make sure to pinch the edges few times)
5. heat the oil for frying on High and reduce to Medium-Low. Fry in a batches till golden brown sambousek.
Be sure to reduce the heat on low while frying the cheese sambousek, because the high heat can make cheese sambousek to open.
