4:53 @SammyandTommy It seems like ages, I have been eagerly anticipating your next video. Finally is out now. Cantonese hotpot is known as steamboat and we don't use water. Instead we have broth which was boiled for a few hours with meaty pork bones/chicken carcass. The ingredients for the steamboat are all kinds of greens, seafoods, fishballs, meats, meatballs, mushrooms, stuffed beancurd, etc. After scalding the meat, seafood, greens in the steamboat broth, it developed into a richer flavour and as we consume the scalded food, we also drink the broth. The dips are usually soya sauce and home make chilli sauce.

This Australian guy is actually insane. I have watched so many travel to China vlogs, and I would say yours is one of the top 3 China vlogs ever; for you are so light hearted and always smiling and never include a pinch of drama in the videos. I really appreciate your mentality. The world is big and rich. People in every country have their own unique history, culture and heritage. These characteristics will not change whether outsiders like them or not, because they are the lives of the locals. As an outsider, the best way to express is to respect and appreciate all the differences. Even if you encounter a lot of things you don't like or don't adapt to, you can simply skip and ignore these parts without mocking or ridiculing them.😀

These food are really authentic. As a Beijinger, copper hotpot is by far my favorite hotpot. Donkey burger, out of the world. Also, my wife's stir-fried noodle is THE BEST. Your video put smile on my face. Thanks.

In terms of authenticity, I would rate him 95 out of 100, while most Beijing locals would probably get 80. As a non-Beijing Chinese, I could only score about 50. Your exploration of Chinese cuisine goes much deeper than that of most budget travel bloggers. China is a vast country, and I recommend that you travel around China if you can obtain the necessary visas. It is really worthwhile and useful to have a guide like this accompany you if you have enough budget. China is a civilization that developed independently with little contact with Western countries. If you rely on your own exploration, it might feel a bit superficial, and some places that require prior knowledge might be easily missed. The Chinese people warmly welcome your visit and look forward to your objective evaluations, even if they are not entirely positive. The pacing and atmosphere of your videos are also excellent. The chive flower sauce is almost only added in Beijing and never in the rest of China! Many people from other regions thought it was too strong. If you are able to enjoy that you really belong to Beijing!

As someone from Beijing, I remember my mom would use hot pot as a out-of-jail free card from cooking diner, all you need are the ingredients from local marketplace and a special pot that boils the water, its super easy to do. Speaking of the Red Star Er Guo Tou, my uncle would always have me grab one from the convenience store downstairs for him every time he visits my family, even when I wasn't even 18!
