Lol at the Tenderloin reference. I grew up there in the 80’s and it is not the same as it used to be. Now just known as the hood. I’ve gone to a lot of wedding receptions at Ha Nam Ninh during the late 80’s and early 90’s.

They made the dry noodle so wrong !!! It’s supposed to be quail egg instead of regular egg (minced pork, minced red salted radish, shrimps and squid ...! Add a bit of sugar over the noodles, some tong-ho and pickled garlic and peppers while you’re eating, it’ll super tasty and flavorful This dish called “ Nam Vang noodle” It’s original from a place of Cambodia but when it got to Vietnam , it became super popular ! (By the way, from Saigon so the way I recommended you to try is Saigon’s style....every City and every place have their own flavor and styles)
