I have met with my local MDARD. Michigan Department of Agriculture and Rural Development. We have a Cottage Law where people can produce food in their residential kitchen to sell directly to the public. I ask about fermented veggies and they said it wasn't allowed because it's considered a potentially hazardous food product. My goal is to expand the products we make to increase income for the year. I wish Sandor Katz could convince the powers that be in Michigan. We have such a short season and I believe fermented foods is the way of the future to become more self sufficient. My .02😎

I first discovered Sandor in 2015 from his book “the art of fermentation”… I’ve been hooked ever since. No question I’m healthier for it. The exploration of the fermentation world is epic!

Are the lactic acid bacteria anaerobic organisms?

facultative anaerobes. They are able to survive both with and without oxygen. Sacchoromyces yeast as well. Some critters are obligate, able to do just one mode of respiration.

@@peterjackson3562 Oh thank you, I almost forgot about facultative anerobes. They prefer conditions that are between anaerobic and aerobic if I'm not mistaken? I'm still learning about them, along with the different types of fungi, so hopefully I can understand how they are different from each other :)

Blaming cows for "producing methane" is such a big nonsense! Anaerobic bacteria are a part of a healthy eco-system and are essential for the life on earth!
