I'm from punjabi family. We make sarson ka saag with sarso, palak ,bathua and methi on traditional chulah. Slowly cook it with adding small amount of hot water gradually grinding with madhani. When cooked completely mix it with makhi ka atta. Finally tadka of ginger, onions, garlic, green chillies with desi ghee. Served with fresh ghar ki makhni and makki ki roti. It really tastes yummy 😀.

Just wanted to know one thing chef I boil ginger garlic onion and tomatoes along with it....then mash them....along with a lil makke ka aata....then simmer and boil it for sometime...then khane ke pehle tadka the same way as u did....minus the adrak and tomatoes... ....and it tastes yummy....but is it the right way...pls do answer to my query.... I made it yesterday only....what a coincidence the ratio of all saags is same as urs Loved the talwaarbaazi chef...I can smell the saag....and it looks yummy
Very hard to get sarson in the US, so I use a mixture of (frozen) greens (spinach, kale, collard greens, broccoli rabe, etc.), and I also put a little bit of broccoli (the last one gives the dish a bit of character, which is needed since spinach is so mild). I use a hand-held blender. Will try your tadka - looks very tasty... makki ka atta is a good tip - usually my dish has a bit of water, especially on the next day.
