I see they'rel using the vintage industrial walking foot sewing machine instead of the new ones. Those are good reliable machines and make the best stitches.

Oh, I disagree with that. They use old sewing machines mostly because they are used to them (especially those old/master tailors). Those modern stitches are nice and have more settings. It is also depends on the machine brand, Juki is the best right now. And of course, modern sewing machine is simpler in term of use.
