Sorry to hear that. The bitterness might be due to a few factors. Goraka can introduce a slight bitterness if used in excess or overcooked, so you could try reducing the amount or soaking it before use. Fenugreek seeds also tend to turn bitter if they’re over-roasted, so make sure they’re just lightly roasted. Additionally, the quality of young jackfruit matters-older or improperly stored jackfruit can have a natural bitterness. Lastly, over-roasting the spices, especially the chili powder, can cause bitterness, so roasting them just until aromatic should help.
