Just be aware of the high concentration of oxalates, specially if you are prone to the formation of kidney stones. Don't consume it in large quantities.

I made this with some grape tomatoes and tomato paste that needed to be used up and an unholy amount of garlic and OMG! That was like 6 months ago and i cant stop thinking about it still 🤤 I havent been able to find some good beets and beet greens yet this year!

Extra time for stems. Chop those greens. Slice some garlic and add some cayenne pepper. When the stems get some time, add lemon zest and salt and put the greens in long enough to wilt. Add the juice from the lemon. Toast bread and rub with garlic, then put the greens on top.

Good recipe! Liked and subbed. I threw a bunch of beet seeds in my garden late Fall early Winter. They began to grow and stayed green throughout several snows we had. I picked many today, April 9th. I'm roasting the beets with other veggies and using your recipe for the greens. Thanks!

I bought fresh organic beets to make kvass, and was looking for a greens and stems recipe. Although I watched a few others, yours was the best, as I'm Italian and this reminded me of nonna's cooking. Beautiful. My gramps was a cook in the army and when we went to visit grampa and Grandmother he would do up delicious food. Best greens with garlic and beet greens like this. Beautiful stuff. Your oven is AMUSING ! We have a lot here in Europe mainly in eastern Europe and the quality of the food and taste in that is just NOTICIBLY better than in a electric or gas oven next to it is looks good too.

Another good use for beet green stems is freezing them for smoothies. I cut the stems in small pieces, too.

Thank you for the video I usually throw away the greens but today I mad it on the top of the stove I added onions first then garlic and chili pepper and then cooked the rest on the stove I added the lemon juice at the end. It was good but a taste you have to get used to.

I sautéed the stems with ginger, then added water to wilt the added beet tops. Salt, Pepper,lemon. Delicious! Bonus:a cup of hot tangy sautée-water.

I would like to try this removing the oil and salt , using the same herbs and lemon , maybe a spritz of coconut liquid aminos, water sautéing then add blended “cream” from pulverized nuts. I think it would taste delicious along with homemade toasted sour dough bread. 🤤 yummmm. Thanks for the inspiration.

What temperature of the oven do you suggest for cooking the stems and/or can you cook them on top of the stove instead? and if so would that still be approximately 4 to 7 minutes for those stems which I usually toss out?

375-400 F. You can absolutely cook them on the stove though. $-7 minutes would be a good starting point, but it may take a little longer to do it on the stove so I would suggest closer to 10 minutes.

Thanks so much!!! The cooking time for the stems can vary based on size. The stems should be tender and slightly crisp (4-7 minutes) before adding the leaves. Once the leaves are added it will only take about two minutes. Just as simple as that.

Recommend blanching the leaves to make them soft. Sauteed they remain tough. :P
