My Dad showed me how to cut up a chicken - he learned from his granny during the depression years - it's one of the 25 or so things that your fathers and grandfathers knew how to do that some people don't know in today's world.... you know like change a tire, drive a stick shift, sharpen a knife, measure and cut wood, etc.

My mom used to cook the gizzards not sure how she did it but it was so good. I don't know if she boiled them then seared them or just pan fried them. They were not chewy and delish.
