Something I noticed. In Warhammer you could click on another faction settlement then hover to a different faction to see relationship number rating between them. But can't do the same in Pharaoh.

Go to game options and search for Diplomatic perspective and active it.

Ramesses has a better Sherden roster than the actual Sherden. The problem with his roster isn't the performance, but the cost. Sherden swordsmen with the double ax swap cost gold, which is an issue for Ramesses cause he doesn't have access to that much gold unless you want to take a school trip to Nubia and fight Amenesse. The Sherden javeliners are some of the best in the game, and the spears are pretty good too thanks to the two-handed swap and fast af speed. Oh and vanguard deployment, which pairs well with the Canaanite units that also get vanguard.

That's all well and good, but the experience of many players with Ramesses is that everyone including the Pharaoh declares war on you out of nowhere around Turn 10-15, even at Normal and even after adoption. Could you expand on what you would advise for those players?

I recommend just spamming the Habiru Militias early on. They are excellent T1 units and have vanguard deployment. Cheap upkeep costs and they only require food. No need for that fancy Medjay stuff early on.
