Have you tried axiom? i know your probably aware of the mod but you always seem to have problems with world edit crashing for large pastes, which dosent seem to be a problem with axiom, and its also just a lot more user friendly. in my experience, ive had no problem pasting regeons of over 10 millioin blocks, save for brief visual glitches or lighting errors

This picture inspires me to make something similar, because i have a modpack with a space mod in it and i was thinking of what the space station was gonna look like but when i saw the thumbnail I thought, i want to make this, so I'll be making this with the shell being 65x16x65. And with the create mod, I'll also add a feeding mechanic where if i starve it then everything i worked for will go boom, inspired by Mumbo's season 7? Or was it 8? Base.

This looks great, but why didn't you just make the disc smaller? If the disc was 1000 blocks instead, and the width of the turtle was 31 blocks, you'd have a height of 279 blocks, just enough for you to squeeze in some terrain without mods. this wouldn't even be that significant of a change since 1000 blocks is still pretty far.
